Simply Divine Meat Loaf with Spinach

I made this with a few healthy substitutions and it was still phenomenal! Used plain yogurt instead of sour cream, turkey instead of beef and kale instead of spinach. It was a huge hit.

German Apple Cake I

Fantastic! I've made this twice now. I used extra apples both times. The second time I made it, I substituted 1/2 the oil for applesauce and used 1 cup of sugar instead of 2. Still got rave reviews! I also followed the advice of another reviewer and sprinkled the pan with cinnamon sugar before adding the batter.

Sausage Soup

This was delicious. I used turkey sausage and replaced the cabbage with zucchini. I also used organic diced tomatoes instead of whole tomatoes. Light, but hearty, and very tasty.

Cousin David's Slow Cooker Brisket

My family loved this, but I thought it tasted a little "ketchupy" Next time I will add beer to the crock pot and maybe less chili sauce. It tasted best reheated the next day.

Meatiest Vegetarian Chili From Your Slow Cooker

This was a huge hit! Even my picky husband loved it. Try it on nachos with cheese and jalapinos - delicious! I left out the tofu and added extra beans. To save time and avoid onion-tears, I chopped all the veggies in the food processor. It gave the chili a perfect consistency.

Hearty Vegetable Lasagna

This is a perfect recipe for a basic vegetable lasagna. I didn't buy enough mozzarella, and it was okay with just the two cups. Next time I will add zucchini and eggplant.

Fennel and Orange Salad

This was the first time I had ever made anything with fennel. The fennel was a bit chewy so I roasted it in some oil and honey. I thought the dish was delicious, but it wasn't as big a hit as I would have thought with my guests.
