Easy Kielbasa Skillet Dinner

Quick and easy but filling and comforting. My suggestion: use a box of Au gratin of cheesy potatoes.

Apple Caramel Biscotti

Almost gave this five stars. Might end up changing it if they grow on me. Almost didn't try it because I HATE cake mixes but a friend had shared some with me when she had some extra and I thought I'd give this a try. Mine was carrot cake and I drizzled it with white chocolate. You could probably get pretty creative with the box mixes. I might try out a lemon one. Also, noticed the directions didn't have instructions to slice the logs before the second baking. I did do that and I don't know how they would've turned out if I hadnt.

Baked Teriyaki Chicken

Sauce is a little sweet. But, double it and keep half of it back to smother the chicken with just before serving.

Amaretto Cheesecake I

Really nice. I was concerned from the reviews that it was going to be too dense. But, that was not a problem at all. Mine was very light and airy. Based on the other reviews, I did double the amaretto and I'm glad I did. I'm not sure I would have tasted the amaretto otherwise; it wasn't even very strong doubled.

Creolized Stuffed Chicken Breasts

I've made this several times. I leave out the bleu cheese because my husband doesn't like it and I'm afraid the tanginess of it will come through. But, it's a great meal - especially over rice. But, if you or your friends/family are low carb dieters, you can serve the rice on the side and everyone's happy. I also don't bother to stuff the breasts. I just slice them on a bias and layer the sausage on top. And, I've used leftover rolled breakfast sausage which is great on this too.

Sausage and Zucchini Lasagna

This is good because it has Italian sausage as opposed to ground meat. It's not spectacular. Don't get me wrong, it's lasagna and lasagna is yummy BUT I gave it four stars because if you're looking for a knock your socks off lasagna, you may be disappointed like I was. The 5 stars reviews are misleading. I almost gave it 3 stars, but thought that was being a little too tough on it.

Famous Meatballs

I'm giving this two stars because it wasn't terrible. But, to be honest, I was very disappointed. Maybe doubling the sauce would help, but I made no changes to this recipe and it turned out lackluster and bland. We will eat it because I hate to throw food away, but I also hate to think of all the other things I could have used 3 lbs. of meatballs for. Removing this one from my recipe box -- sorry.

Italian Sausage and Zucchini

Amazing Chocolate Zucchini Bread

I made this because I was in a pinch for breakfast and had a lot of zucchini from our garden. It's moist and tastes like a chocolate cake without icing. But, I really only made it because I had the extra zucchini and it was quick and easy; so, for those reasons it was good but not quite 5 star worthy. Also, you may want to note that mine was thoroughly cooked at 40 minutes. (Normally, my oven takes the full time or longer with most recipes.)

Salami, Cream Cheese, and Pepperoncini Roll-Ups

Yum + Me! These may not make it to the party. One tip: My salami was sliced a little too thin so that when I spread the creaam cheese on it, it would rip up. Too prevent this, I just cut open the peppers and stuffed them with cream cheese, then rolled it up with the salami. This also gives you the chance to seed the peppers, if you want, and kept the presentation a little cleaner.

Roasted Beets and Sauteed Beet Greens

I'm giving this 4 stars because I HATE beets. But, this is edible. The greens are pungent (like mustard greens almost) but together they aren't bad, especially with butter.

Caramel Bread Pudding

Mine was a little runny. It did have a good flavor, similar to a cinnamon roll but not my favorite bread pudding recipe. The pineapple bread pudding recipe on this site is still my favorite.
