Thai Cucumber Salad

excellent recipe! very yummy! I added some sliced onion to it, excellent addition. It does use 1/2 cup white sugar but I don't think you really end up eating that much, I had a lot of liquid left after we ate all the salad. I'd say this recipe barely feeds 4, we wolfed it down!

The Best Thai Peanut Sauce

very good! I give 4 stars instead of 5 b/c I don't have a lot of experience with peanut sauces so I'm not sure this is actually "the best". But it was darned good! I used one full can of coconut milk and about a cup of peanut butter. I'd suggest starting with 1/2 the can of coconut milk and going from there, my sauce was quite liquidy. The taste was great though. I served this over the "Thai Tuna Burgers" by Dakota Kelly, over Jasmine rice with the cilantro on the side. Very good combination with the tuna burgers and rice! My husband's eyes lit up when he tasted all this together.

Thai Tuna Burgers

YUM-O! very good recipe!! I wasn't sure I wanted to mince up my nice tuna steaks, but it was more than worth it for the flavor of these burgers! I took the advice of others & made a few changes: I used 1 tsp green curry paste in place of cumin, omitted the ketchup, left out the cilantro, used more ginger (I like stuff spicy), only used 1 lb. of steaks b/c that's what I had, and served it over Jasmine rice with "The Best Thai Peanut Sauce" by Stephanie M. (heeded others advice with that recipe too). I served the cilantro on the side. YUMMY!! Yea, the ingredient list might be a little strange for both this & the peanut sauce, but wow are they good! I'd recommend tasting the tuna burger first before putting the peanut sauce on it, you may find you like it as is; the peanut sauce gives in an entirely new, but just as good, flavor. My husband loved this as well; it goes in the make-again-soon pile! Thanks Dakota for a great recipe!

Addictive Sweet Potato Burritos

Very good! I took the advice of others and made the following changes: black beans instead of kidney, only mashed 1/2 of them, I only needed about 1/4 to 1/2 cup water rather than the 2 cups called for, added about a cup of corn, added about 3 oz cream cheese to the sweet potato mash, and added cilantro with the cheese. My husband put sour cream on his at the table. I warmed my wraps in the microwave & just served that way, no oven needed. I did make some in the oven but I felt the flavor was much better just right off the stove. My husband loved it and this will go into our regular cooking rotation and I'll be serving it to guests soon! This is by far the best sweet potato burrito recipe I've ever tried. YUM!
