Baby Back Ribs

I removed the membrane and split the racks in half and wrapped them up. I had a hard time getting them out of the packets without them falling apart! I was ready to broil them for 10min but when I pulled them out they were covered with sauce and looked great. I used sweet baby rays and drenched them in it. I put the rib meat side down so they looked like a upside down rainbow. Sooo good. I have cooked ribs many different ways and this is the best!

Chocolate Mint Cookies I

Cranberry Orange Cookies

These were pretty good. They taste just like a orange/cran muffin you would get at dunkin (just in cookie form). I used dried sweetened crans because that is all I had. Never bothered chopping them. Turned out fine.

Chicken Cordon Bleu II

I have made this twice now and both times received compliments. The sauce is AMAZING. The first time I used the flour coating and the second I did breadcrumbs. The breadcrumbs didn't hold well after simmering in the liquid but most of them did stay on. It just didn't look very uniform. To keep the cheese from melting out I got a block of swiss cheese and cut nice thick chunks and wrapped that well thicker slices of ham to secure it. When cutting into the chicken (even though I could not roll the chicken completly closed) the cheese was just softened perfectly and not melted away!

Roasted Brussels Sprouts

These are very good. I added 1 clove of minced garlic to the bag and a sprinkle of parm cheese. I cut the bigger sprouts in half as suggested and timmed them for 20min. They were not done so I would roast them the full time but maybe half the bigger ones if you don't like that creamy middle. Everyone said they were great (even those who normally do not like sprouts).

Cinnabun Cookies

Well, my dough was a bit hard to work with but manageable. I kind of rolled/worked it with my fingers to get the rectangle shape. I added all the filling and then cut the rectangles in half and then rolled them (made the logs easier to move to the freezer). Then I put the logs into the freezer for 10min before cutting. Made it very easy. Let them cool on the sheets for 7-8min after taking them out.

Twice Baked Potatoes

Holy pepper! I put in 1 teaspoon and all I could take was pepper. Not sure if it was the combination of red and black pepper but it was really strong. Could not taste anything else. It was really strange. I would make again but cut out the red pepper

Banana Banana Bread

This bread is ridiculous. I made it per instructions and checked it at 45 minutes as suggested and the outside looked nice and brown but the middle was soup! I left it in another 10 min, then another 10 min, then another 10 min and finally I could get the middle nice and firm but the outside was really dark. I let it cool and cut a slice and the outside was really chewy because of the cooking time and the inside still was not 100% firm. This bread is just frustrating. The outside cooks too fast for the inside. I will not use this one again. Never had this issue with banana bread before.
