Grammy's Easy Blackberry Cobbler

It's a no go by itself, too sweet...even with black coffee. Every bite I took, something was missing. For instance, either a cream cheese mixture and a graham cracker crust or a moist, white cake with veins of sugar/cinnamon. I made the recipe as is without tweaking it.

Brown Sugar Instant Oatmeal Muffins

This was an easy late nite snack, that was a delicious smack-down on my hunger. I used what I had on hand, which was cinnamon-plum spiced/flax instant oatmeal. Additionally, I used Splenda instead of white sugar. Sure it could use more sugar/sweetener if a cupcake was the goal...but as a muffin...nope, as is...perfect. Thanks for the share. :)

Plum Pie

Sweet...literally. The recipe is straightforward and pretty easy to handle for even a novice. For practical purposes, I used a leftover deep dish pie crust. People with a sweet tooth will be lost in pleasure, for instance, my youngest child and wife enjoyed this. Conversely, I took one bite and made myself an double espresso to take the sweet edge off. Next time, I plan to cut back on the sugar, coarsely chop the plums instead of slicing, and leave out the nuts and lemon zest on the topping. This was my first time making a plum pie and have already made a plum tart recipe based on this recipe. Thank you for the share.

Chewy Chocolate Cookies I

Perfect. They puffed up beautifully with an outer skin with the softest inside...they were gone within half a day. I substituted 3/4 of the total sugar amount with powdered stevia, and one cup of mini-chocolate chips instead of 2 cups of regular-sized chocolate chips. Next time, I plan to infuse the mix with a lil peppermint extract for a holiday flavor. A suggestion: do not use butter or anything else that has less than a 53% vegetable oil, some peeps will advocate 80%. Anything less, and more than likely the results will be flat cookies. Likewise, the butter and sugar/sweeteners mixture has to be mixed until light and fluffy not just mixed. Have fun and thanks for the delicious recipe. *Note (12/10/10): Scratch using the exact measurements of flour. My brand, new "Anchor" 4- cup glass measurement cup is off. Each "marked" cup is actually 1 and 1/8 cup...so for 2 cups (per this recipe) actually yields 2 1/4 cup, and extra 1/4 cup of flour for delicious fluffy cookies! Enjoy.

Creamy Lemon Pie

I loved the ease of this pie and the taste was delicious. Yes, it is a bit sweet...and my kids loved it. For adults, it was perfect with a cup of tea or coffee. But my pie didn't come out with a yellow filling but rather a dull, creme color...but this is meant to be eaten not seen. :) I topped it with homemade whipped cream and yes, ultra-pasteurized heavy cream and sugar/artificial sweeteners/stevia works great. *Cheers*

Pumpkin Pie

The taste and ease of making this pie is outstanding. But, the cooking time is off...way off. It took 70 minutes and I had to treat it like a cheesecake by turning off the oven and leaving it in for another 20 min. Due to the extra time, foil is needed for the crust, which is not needed in most pie recipes nor is it mentioned in this recipe. Using a deep 9-inch pie shell, I wasted a lot of pie filling after filling it. Again, this is a delicious recipe, it just needs to be revamped. The next time I use this and double it, I'll use three regular-size pie shells to avoid wasting such wonderful filling.

Homestyle Potato Chips

Thanks for the share. The chips were delicious and easy to make. The biggest problem was my lack of willpower to refrain eating chips before finishing latter batches. I used a lil generic seasoning salt from F&E and the kids ate it all. I didn't have a mandolin cutter and instead used a peeler, it worked perfectly (just be careful). :)

Oatmeal Raisin Cookies I

These cookies rawked. The recipe works as is, but I also made bigger cookies with 3 additional minutes. A shade crispy on the the edges, soft in the middle and slightly puffy...YUM! I reduced the crispness on the bottom via a silicone baking mat, if desired. Hints I use for reducing "runny" cookies (but I didn't use for this recipe): Use butter with at least 50% oil, or substitute a portion of white flour with a equal amount of sifted whole wheat (usually only a quarter of the total and max amount is 1/2 of total.), and don't forget to rotate the tray halfway through the baking time. Future tweaks: using nutmeg, apple spice and/or dried fruit/berries (rehydrate?) *Note-also works well with replacing white sugar with Splenda.

Simple BBQ Ribs

Simply delicious and easy to make. The rib meat was extremely tender and the leftovers were easy to shred for next day BBQ sandwiches. The given recipe amount was more than enough fer a family of seven.

Green Chile Stew with Pork

TEX MEX. I was looking fer a recipe (non Tex-Mex) akin to the ones found in Mexican and Native American Indian restaurants/cafes (AZ, CO, CA, NM). So if that's the type you're looking fer...skip it, cause this ain't it...this recipe is pure Tex-Mex. The recipe is easy and delicious. The short time needed (for a stew) is a big plus. I actually kept it simmering almost two hours later and still delicious. This is the best Tex-Mex recipe I've found to date on this site. I can't wait to top off my Chilaquiles with it.

Easy French Dip Sandwiches

I loved it, it's hand down the best quick French Dip Sandwich recipe. Additionally, it's better than any other of the 10 or so slow cooked recipes on this site that I've tried. The sandwiches were devoured in record time. I agree with others, that you could tweak it with herbs and spices, but its optional depending on your time frame and what's in you pantry. Double-strength beef broth works well in a pinch.

Easy Slow Cooker French Dip

The recipe is pretty easy and it's a might tasty...if you've never tried drinking beer. Beer drinkers beware, because every bite I took gave thoughts of beer instead of a French Dip sandwich. The kids liked it, but weren't crazy about it. Sure, I'll be making it again and like most reviewers, I'll be transforming it into a Philly Cheese Steak sandwich. Next time we're gonna give it a go with a red or rose wine instead of beer.

Lemonade

We tried this recipe and it's a keeper. I used 1/4 cup of Splenda and 1/4 cup of sugar instead of the 1/2 cup of sugar and it rawks. The kids love it. Thanks.

Sugar Free Strawberry Jiffy Jam

Made this a few days ago with ease. The kids and I love it on multi-grain toast and bagels. The only hints I have are DON'T be cheap using the strawberries and using sugar-free raspberry jell-o works fine.

Bacon Quiche

The recipe for quiche rawks. It's easy and fast. I've used a variety of cheeses and still the quiche is just as yummy. I like using real turkey or bacon bits/pieces (in the salad section) instead of bacon (faster and it sinks in) and throw in a small can of diced green chilies.

House Fried Rice

My family and I thought that the fried rice was pretty good and will be making it again. I think the recipe is a good foundation for adding things depending on the preference of the cook (cilantro, bean sprouts, green onions, various oils, etc...).

Ropa Vieja

This recipe was excellent overall, without much prep time and easy directions. Next time, I personally would use a "mellow/light-tasting" red wine to prevent any chance of the wine overpowering everything else (came close). Additionally I used a chunky, homemade salsa instead of a store bought salsa. My family loved it, and the leftovers are...history.
