Baked Tofu Bites

Very, very tasty. I didn't have ketchup but had Jufran banana sauce (a condiment that looks like ketchup but is a little sweeter, found in Filipino groceries) so used that instead. I also ditched the liquid smoke. I used extra firm tofu and pressed the liquid out as others have suggested, for about 30 minutes. I also cut the tofu into cubes smaller than the 1/2". This was so good on top of my salad, and even better the next day. I'll definitely make this again.

Hot Turkey Salad Sandwiches

This was sooooooo yummy. I didn't have any celery on hand, so I peeled and diced a small apple instead. It added a nice crunch and sweetness. Otherwise, I followed the recipe and my boyfriend loved it so much that he ate two sandwiches!

Cocoa Rum Balls

These were awesome. Definitely better after a couple of days because I had a couple (okay, more than a couple) immediately after I made them and thought for a second that I just had a shot of rum. I took everyone's advice and put the vanilla wafers and the nuts (I used pecans) through the food processor first. So easy to make!

Easy Alfredo Sauce II

This was so incredibly easy to make! I just had to try it when I saw that it involved no cooking at all. I followed the recipe except for a sprinkle of garlic powder since I can never get enough garlic. Also, I topped this with some cubes of chicken breast that I had cooked in olive oil with salt, white pepper, and more garlic powder.

Tofu Masala

Very healthy recipe! When I followed the recipe exactly, however, I found it rather bland. I found it helpful to replace the water with chicken broth and added various spices from my pantry in order to save it.

Owen's Chicken Rice

I ended up having to add more water than the recipe called for because the rice was still hard when my rice cooker stopped. Also, since there was more water added, the dish was rather bland, so I served it with some Maggi Seasoning on the side. It turned out all right, but since I had to modify the recipe in order for it to turn out okay, I'm giving it only 3 stars.

Broiled Tilapia Parmesan

Delicious! I actually used some mahi mahi I was keeping in the freezer instead of tilapia, and it turned out very well. Following some other reviewers' suggestions, I too added panko crumbs (used same amount of panko as I did parmesan), which formed a lovely crust on the fillets. Next time, though, I'll cut down on the amount of mayonnaise and probably use just enough to moisten the cheese and breadcrumb mixture.

Quinoa Side Dish

Great recipe, though I skipped toasting the quinoa in butter since I didn't want to add butter to the dish. I used red onions and they were a nice, colorful addition to the dish.

Cielo's Spring Salmon

This was okay. I normally enjoy Miracle Whip but found it made the salmon too sweet for my taste. I ended up scraping off all of the marinade before serving this for dinner.

Black Bean Lasagna I

I really enjoyed this recipe, though I did use vegetarian refried beans in place of mashing 1 can of black beans. And since a few people thought the dish was bland, I used an entire of roasted garlic pasta sauce instead of the 15 ounces of tomato sauce. Even though, I tasted this while I was heating the mixture and still had to adjust the seasonings (I mean, add more), so I'm knocking off a star. But it was delicious!

I used chicken stock instead of the vegetable broth, and threw in 1 cup of chopped tomatoes. This was absolutely delicious and so quick to prepare!

Jambalaya

This was really flavorful. I've already served this for dinner for my friends on several occasions, and each time, someone asks for the recipe (and then I steer them to this site). I cooked the rice separately to make sure it cooked all the way. Will definitely keep making in the future.

Very good! Found it initially a little bland, so I added extra soy sauce and chili sauce. This actually tasted even better the next day, so I guess the flavors needed to meld.
