King Ranch Chicken Casserole
About this Cook
Cooking and baking are my catharsis. As things pan out I end up baking more than cooking. People love what I make. A lot.
My favorite things to cook
desserts of all kinds, appetizers, chicken and meat dishes
My favorite family cooking traditions
grew up in Texas with Southern and Tex-Mex food. Have branched out to other flavors (Italian, Cajun). Haven't cooked much Asian, but sure love eating it.
My cooking triumphs
homemade peanut butter cups (County Fair grand prize winner. I have made these for years. EVERY person, no exaggeration, who's ever tried them says they put Reeses to shame); Basil pesto (best served with Parmesan Sourdough bread); Homemade green salsa; Double Chocolate Cheesecake (bakeoff winner. A tall, rich choc cheesecake with a chocolate-pecan cookiedough filling).
My cooking tragedies
none personally, but on a camping trip in college others in our group were to make brownies one night. They couldn't see well in the firelight, and put Crystal Light instead of sugar in the brownie mix. We didn't know this happened til we took a bite. Lemonade brownies are definitely unique... Wasn't my cooking tragedy, but funny!
