Eggplant Parmesan II

This is an excellent recipe and I will make it many more times! I halved the recipe for my family. I used the smaller Japanese eggplants. I did not have quite enough Mozzerella, so I just subbed Provolone slices for the top. I put it under the broiler for a couple minutes to make the top layer golden and bubbly. Such an AWESOME recipe!

To Die For Blueberry Muffins

I made the muffins in a jumbo muffin pan. The topping was not crumbly at all. I think reducing the butter to 2-3 Tbs would be plenty. I also used double strength vanilla. The topping sunk into my jumbo muffins, but they still tasted good. It made 5 jumbo muffins.

Blueberry Buckle

WOW! I served this with vanilla ice cream, but quite honestly, it is great by itself. This will be perfect for breakfast too, with coffee. So easy and delicious! Even the kids loved it! Thanks for such a terrific recipe.

The Best Doggy Biscuits!

These little doggy biscuits were very easy to make. My 3 year old enjoyed helping. However, even after sealed airtight, they molded within 4 days. Next time I will cut the recipe in half, or even a third so they won't go bad so quickly. Dog like them!

Spanish Slaw

This recipe is really good. It's a nice departure from the mayo based slaws. I used the 16 oz. bag of 3-Color deli slaw. I left out the grated onion and instead added 2 minced green onions. I didn't have ground mustard on hand, so just used prepared yellow mustard. VERY GOOD!

This applesauce was so delicious and very easy to make. I used the Pampered Chef Cinnamon Plus for the cinnamon. It was SO YUMMY!! My kids loved it too.

Chicken Spaghetti I

I'm rating this only 4 since I had to add some spice to it! Salt and pepper only for taste. I didn't use bell pepper, but did add some diced onion, chopped mushrooms, and freshly minced garlic. I seasoned the chicken with Italian seasoning before grilling. Used angel hair pasta instead of spaghetti. Very filling dish. Could cut in half or freeze half of it as it is a great freezer meal.

Key Lime Cake III

This recipe is a great summer treat. I make it in a 9x13 pan to save time and for easy transportation. I also use fresh key limes for the lime juice and use my microplane to garnish the top of the cake. Pretty and refreshing too!

This recipe is SO GOOD! I make this for the holidays using my Pampered Chef Fluted Pan for a pretty molded shape. I fill the center with sour cream and additional chopped pecans. DELISH!!

World's Best Peanut Butter Fudge

This truly is the best peanut butter fudge! I was hesitant to try it due to flour in the recipe, but I was pleasantly surprised at the end result. It is very tasty and sets quickly. Will make this one many more times!
