Spicy Corn Dip

This was very good & easy. Didn't have chiles, so I left those out. Subbed chives and a little onion powder for the green onions. The directions do not say to do so, but I drained the corn.

Easy Batter Fruit Cobbler

Buttermilk Pancakes II

I'll stick to my other recipe. I followed the recipe exactly and the batter was way too thick. I had to add whole milk to thin it for pouring. They did not have a great flavor either. They were missing something.

Steak Tips with Mushroom Sauce

Great and easy! I will make a big batch of this to keep on hand. 3 Tbs to 1 lb. ground beef is a good start. More if you like it spicier.

Marshmallow Treats

A classic, simple recipe. The kids loved helping with this one. We used the jet puffed strawberry marshmellows (valentine's edition) so we ended up with pink treats. Yummy and fun!

Exquisite Pizza Sauce

I have made this recipe twice now. The honey is a nice addition, but it makes the sauce overly sweet. My kids complained that it was spicey, but they are spice weenies. For the second batch, I used less honey and much less cayenne. It was good.

Cinnamon Raisin Biscuits

These were really easy and tasty. They did turn out a little dry. Next time, I will try brushing the tops with butter before baking and sprinkle on more cinnamon sugar.

Banana Banana Bread

I had overly ripened bananas so I gave this a try. This is a nice basic recipe. It is not overly sweet or gooey and has a nice crunchy top. I added 3/4 cup chopped pecans. Would make this again. It is great with coffee.

Pineapple Casserole II

This was just 'okay' for me. It is really sweet and seems to have too much butter. It turned out a little soupy even though I drained the pineapple well. Won't make this one again.

Buttery Spritz Cookies

This recipe is delicious and easy. They worked well in my cookie press. I doubled the amount of almond and they tasted perfect! We dipped the bottom portion of some into melted dark chocolate and that coupled with the subtle almond flavor was really good.

These were good. However, I am rating them only four stars because the chocolate took longer to melt than recipe stated. Also, I've found usind a double boiler and using a bit of grated wax, rather than shortening works better. The chocolate will be thinner and set more quickly. If you roll the balls then put in the freezer rather than the fridge, it will also make them set up for easier dipping.

Truck-Stop Buttermilk Pancakes

These pancakes are really good. The entire family loved them. Be warned that this recipe makes a TON of batter! I reduced the recipe to feed 4 and still had lots of leftovers. Good news is the leftovers freeze well for a speedy breakfast on a weekday.
