Dirt Cake II

Too easy. I made this and served it in the back of a new dump truck for my son's truck themed birthday party. It was a hit with the kids and adults too!

Oh my! These are TDF! The time it takes to whip the meringue and fold it in is so worth it! I served them with homemade blueberry sauce and we did not have any leftover!

Aunt Kate's Strawberry Cake

This is a very heavy cake. It is really thick, so if you crave a light, fluffy cake, this is not the one. The cake itself is not very sweet. The frosting, however, is TDF! It is sweet and a perfect pairing with the cake. I doubled this and stacked the heavy layers. The icing was running over it and it looked as great as it tasted.

Gourmet Mushroom Risotto

I used long grain brown rice in this recipe, so I obviosly had to cook and stir much longer (about 45 minutes) and it tasted great. 6 cups broth is too much though and I had a cup leftover.

Easy Meatloaf

This is super easy just as stated! The whole family enjoyed it. I had 2 lbs lean ground beef and used all of it. I cooked 10 minutes more and it was perfect. Comfort food at its best.

Actually Delicious Turkey Burgers

Very good. Added a splash of soy & worcestershire for more flavor. Turned out nicely on my grill pan. Made 9 patties and the rest I rolled into meatballs and baked at 350 for 20 minutes. They were great!

This recipe was really easy and tasted great. Even my three little spicy-hating children loved it! I had to cook longer than recipe stated, maybe the fillets I had were bigger. Good recipe.

Peach Praline Muffins

These are delicious. I made them per the recipe. They are not overly sweet, which I enjoy. The topping is just perfect, it is truly the 'praline' of the recipe. I doubled the recipe and used fresh peaches. I froze half and they freeze and thaw beautifully with no flavor sacrificed. A definate keeper!

Garlic Roasted Summer Squash

My favorite way to prepare yellow squash! I use less olive oil. I vary the spices. Sometimes dill, other times just thyme, oregano, and parsley. It is also good with a garlic infused oil and Italian seasoning.

Banana Chocolate Chip Cake

I made this per the recipe other than increasing the chocolate to 1 cup. I would call this Banana Chocolate Chip Snack Cake. It does not rise high enough to be considered a cake. It is more like a muffin without the hassle of muffin cups. The flavor is great. I was not patient enough to allow for cooling time. Tastes great hot and cooled. I think I will add nuts next time. This was a great after dinner treat and I think it will be perfect for the kids lunchboxes, using a cookie cutter for a cute shape.
