Pumpkin Pancakes

I followed the recipe as written, but did not like the end product. The pancakes lacked flavor and were not light and fluffy. They were edible, but not incredible.

Cinnamon Pumpkin Waffles

These waffles are quite tasty. The recipe needs to be clear they are a Belgian waffle rather than the thinner, crisper variety. Do not bother making them if you want crisp waffles. These were lighter and fluffier. They do require longer cooking times, so I was glad I had a family size waffle iron. They were a bit chewy but my family enjoyed them. I didn't serve with syrup as they are sweet enough. The flavor is reminiscent of gingerbread as is the texture. I would make these again with the addition of fresh whipped cream for a real treat.

Lime Cilantro Rice

Gulliver's Cream Corn

Good recipe. I was looking for "drippy corn" that hubby loves and had an abundance of fresh corn I'd cut off the cob. I avoid MSG, so I dashed with some soy sauce. I don't know who Gulliver is, but my Southern family enjoyed this side dish.

Fluffy French Toast

It's the flour. It makes this toast fluffy and delish! I sprinkle more cinnamon as I go, because it seems to all go on the first dipped slice if I don't. Made twice already and the family loves it!

Mexican Cornbread Salad

This was a fun dish to take to a potluck. It looked awesome layered in my trifle bowl! I cubed my cornbread rather than crumbling. It made for nice presentation. I used a homemade ranch dressing that was yogurt based to save on calories and fat. Next time, I'll use more dressing. It needed a bit more than 16 oz.

Taco Salad III

Easy and crowd pleasing! I leave out the red onion and avocado. If making for dinner, I let me family assemble their own with the desired toppings and then add the dressing. Otherwise, you can't save leftovers as they'll be soggy with dressing. Fritos brand chips are a must for this dish!

Guacamole

Awesome! I used a lemon since I didn't have a lime on hand. I used one yellow tomato rather than 2 plum tomatoes. Pulsed in my Pampered Chef food processor. The entire family devoured it!

Chicken Noodle Soup

Good soup! I used fresh parsley since I had it on hand. Instead of using bullion, I used homemade chicken stock. It tasted good.

BBQ Pork for Sandwiches

Awesome! I used a 7 lb. Boston butt as a reviewer mentioned. Put in crock pot along with broth. Cooked on low over night. Shredded the next morning, and left in crock pot on low with a little broth while at church. Added two bottles Sticky Fingers sauce and popped in oven for 30 minutes. Made fabulous sandwiches! This is a keeper!
