Meringue Kisses I
These meringue kisses are GREAT! They do not turn out dry like many other meringue cookie recipes or store-bought meringue cookies. I use mini chocolate chips. My family loves coconut, so I add 1/4 cup of shredded coconut with the chocolate chips. They are kind of fragile to pack in lunch bags/boxes, but they are a delicious treat at home!

Apple Cider Sauce and Pork Loin Chops
WOW...this recipe is fantastic!! My significant other loves pork and I'm always looking for different ways to prepare it so that it does not become dry. The pork loin chops were tender and juicy and the sauce and seasonings only enhanced the flavor. When I first found this recipe, I was afraid that 25 minutes in a 375 degree oven would dry the pork loin chops out, but the apple cider helps to keep them moist. An absolutely perfect, no-fuss meal...I served this with a spinach salad and garlic mashed potatoes.

Grilled Spicy Lamb Burgers
I cook ground lamb and serve it to my dogs all the time, but never thought of it as a delicious meal for the rest of my family until now...this recipe is stellar! We don't have a grill, so I used a skillet, preheated for one minute and brushed with a bit of cooking oil. I then cooked the burgers for 5 minutes on each side. I placed them in a baking dish and cooked them in a preheated (300 F) oven for an additional 5 minutes, along with the pita bread. Along with the feta cheese, I filled the pita bread with thinly sliced cucumbers, diced tomatoes and a dressing I made with plain yogurt and finely chopped onions. It tasted GREAT...this recipe is a definite keeper in my collection!
