Jesse and Steve's Fresh Strawberry Cake

This is an awesome recipe! It took a while to find a strawberry cake recipe that didn't call for Jello, but it was worth it! This recipe is super moist and yummy. For anyone who is interested, though (I don't know if it mentions in the recipe) it doesn't actually have to be a strawberry cake. I've tried it a few times with other fruit as well. First with blueberries, which was... interesting. Tasted fine, if not particularly strongly of blueberry (maybe a pie filling would work better?), but it was rather interesting looking - especially when cooked. I made it with Banana as well, for my dad's birthday - that turned out AWESOME. Especially since I used a chocolate frosting. It was really heavy, though. I probably shouldn't have made it a layer cake... LOL.

Canadian Shortbread 'Eh'

I just finished making these about 20 minutes ago - they turned out really great! I did mess with the recipe a bit, though - I was going to try to make them a bit lighter, like my mom's whipped shortbread, then put it through the cookie press. I thought I'd do that by creaming the butter, sugar, and syrup together, and then sifting in the flour a little at a time, and then whipping the dough. I didn't end up using the cookie press - the first two sheets got rolled into balls, then flattened. They turned out well, but then my mom suggested I add jam. I rolled the dough into balls, made and indent with my finger, then added jam into the indent, turning them into a type of thumb-print cookie. They turned out really well! Strawberry jam goes really well with the maple shortbread dough.

We've made this a few times now. It's really good! We usually use it with a type of noodle, like Macaroni.

Chicken and Tomato Scampi

I don't even know how many times I've made this recipe since I came across it - Thanks so much to Jan for sharing it! I really love this recipe. I even made it for a group meal at work a few months ago, and everyone really liked it. One variation I guess - I like it as a rice dish, but we tend to switch it up with spaghetti and use the scampi as a spaghetti sauce quite often. It works very well either way.
