I have made this marinade with and without the salt and prefer it without. It is just me and my husband, so I scale it to 8 servings. I put 2 boneless chicken breasts in a gallon ziplock bag, pour the amount of marinade I need, then refrigerate the rest since we eat chicken at least once a week. I have marinated this for 4 hours and have also had to let it marinate overnight because we got home too late to cook and it was great either way. I know the lemon can cook the chicken, but I have never had a problem with this. I have also used lime in place of the lemon, and found the lemon makes the flavor stronger, so I prefer lime. When I review a recipe, I make it as written the first time, then adjust to suit my taste. This recipe is 5 stars as written. The marinade makes my boneless skinless breasts very juicy,which I often find dry.
