Baked BBQ Baby Back Ribs

The cook time was spot on for BABY BACK RIBS, and YES THERE IS A DIFFERENCE IN TYPES OF RIBS! The rub was good too, but I will scale the salt and sugar down next time. I also rub liquid smoke all over the ribs prior to rubbing in the rib rub for a nice smokey flavor. It also helps the rub to adhere. YUM!!

Black Magic Cake

Danger! Danger! This recipe is awesome, the best chocolate cake I've ever made from scratch! I did not have buttermilk, so I looked on a site for the substitute and it said to use 3/4 cup sour cream and 1/4 cup water to equal 1 cup of buttermilk (this is the only way I'll make it since I ALWAYS have sour cream on hand and I never have buttermilk!,) this cake is to die for, even without frosting. ,I have tried several chocolate cake recipes, but they always turned out dry. This is a perfectly moist cake recipe. I also brewed 1 cup of Gloria Jean's Hazelnut coffee and it was strong enough for me since I am also going to use a coffee frosting to make cake balls :-) UPDATE 9/13/14: I used this recipe for coconut poke cake and it was awesome!! After I baked the Black Magic Cake I poked holes in the cake with a chopstick while cake was still hot, then poured a can of cream of coconut over it. After the cake cooled I refrigerated it. Right before serving I frosted it with whip cream and topped with flaked coconut.YUM!! Thanx for this great recipe!

Sour Cream Cornbread

Yep, my new favorite cornbread recipe! I cut the recipe in half and used an 8x8 baking dish. I did not have enough sour cream, so I used fat free yogurt and light sour cream! Yum! It's good as is, but will try it reducing sugar next time, sometimes I want sweet, and sometimes not so sweet...depends on what I'm eating with it.

Ranch Dressing II

I made this twice, first time as is. I found the original recipe had too much dill and was too thick. The second time I made it, I used 1/2 C light sour cream, 1/2 cup light mayo, and 1/4 cup of fat free half and half to thin it. Measurements for spices stayed the same, EXCEPT reduced dill to 1/8 tsp. it was FABULOUS!!! Let this ranch sit for a few hours for the flavors to meld before reviewing. This is a great Ranch dressing, but with all recipes I adjust to my taste. Make this, then adjust to your liking!!

Tomato Chicken

I have made this twice. I Followed the recipe exactly the first time I made it. I do this with all the recipes I rate to be fair, but I liked it even better the second time I made it. The second time I made it I seasoned the chicken with the spices and browned the thighs in light tasting olive oil with onion slices, then added the tomatoes. Simmered for 45 minutes, then added a splash of white wine, lime juice and fresh cilantro and cooked a minute or 2 longer when wine was cooked down. I Served it over white rice. Will definitely make again and again and use more tomatoes.

Yummy Peanut Butter Cookies

I am not experienced at making peanut butter cookies, so thought I would try this recipe. I followed the recipe, but was dissapointed. Think I will keep looking. I might try one I saw made with baking powder. 8/26/13...I am changing my rating from 2 to 4 stars because once these cookies cooled completely they were awesome. The recipe does state to cool on cookie sheet for 5 minutes and then cool completely, and these instructions have to be followed!! They cannot be handled until cooled completely or they will just fall apart. This information just needs to be stressed!! Another helpful tip is to refrigerate the dough at least 2 hours before baking as I do with almost all of my cookie recipes to make it easier to handle. I then use a cookie scoop and flatten the cookie Very Lightly(not completely) with a fork and make criss crosses. Use parchment paper and bake as directed!!

Golden Sweet Cornbread

Original Chex® Party Mix

Excellent. I used a big plastic bowl and mixed well before and during microwaving. Allow time to cool and everything crisps up like the oven. You don't have to worry about scorching and it's fast and easy. I make up a gallon ziploc bagful of dry ingredeints in advance and when ready I add sauce ingredients!! I like cheeze crackers in mine instead of pretzels, but you can make any changes you like!!

Wow!! Way too much red wine vinegar....makes me want to go the other way and finde a recipe without any vinegar at all. If you love vinegar, this ones for you. I didn't care for it at all,

Marinade for Chicken

I have made this marinade with and without the salt and prefer it without. It is just me and my husband, so I scale it to 8 servings. I put 2 boneless chicken breasts in a gallon ziplock bag, pour the amount of marinade I need, then refrigerate the rest since we eat chicken at least once a week. I have marinated this for 4 hours and have also had to let it marinate overnight because we got home too late to cook and it was great either way. I know the lemon can cook the chicken, but I have never had a problem with this. I have also used lime in place of the lemon, and found the lemon makes the flavor stronger, so I prefer lime. When I review a recipe, I make it as written the first time, then adjust to suit my taste. This recipe is 5 stars as written. The marinade makes my boneless skinless breasts very juicy,which I often find dry.

Basic Yankee Bread Stuffing

My favorite bread stuffing recipe! I toast the bread the day before and let sit on stackable cookie racks overnight(with wax paper underneath to catch any crumbs). I use low fat sausage and cook in muffin pans the next day with a dolop of butter on top!! YUM!

Potato Casserole

This is a great recipe. Obviousy mls has not made it, because it does not come out soupy at all. I don't think recipes should be rated if they haven't been followed properly. The bad thing is, readers are heading that rating. Excellent dish, everyone asks for it at gatherings over and over again!! :-)
