About this Cook
The extent of my cooking while growing up (with my dad) consisted of Hamburger Helper meals, so as an adult I had to teach myself to cook "real" meals. Having a husband as a meat-eater can be a bit of a challenge (I've been a vegetarian for 20+ years), so I'm often searching for recipes that will satisfy us both.
My favorite things to cook
I prefer relatively simple/quick recipes and love any dish with black beans in it, as well as fresh garlic. I enjoy baking in the winter and absolutely love chocolate chip cookies.
My favorite family cooking traditions
My grandmother and I used to bake pumpkin pies together at Thanksgiving and Christmas each year, since we had family gatherings of up to 30 people. Now that she's gone, I am finally making them on my own.
My cooking triumphs
Still working on that!
My cooking tragedies
I can't think of anything specific other than burning rice occasionally, but everyone used to tease me because I didn't cook at all several years ago. Thanks to this website (and the reviews/suggestions), I can finally be proud of what I cook.

Heather's Cilantro, Black Bean, and Corn Salsa
Yum! This had many of my favorite ingredients and sounded easy to throw together quickly (it is), so I made it for a party recently. I had forgotten to buy avocado, but everyone still loved it. And instead of two cans of corn, I just added one can of Mexican corn.

Banana Cream Pie III
Super easy to make and delicious! I took the suggestions of many others and used 1 box of banana cream pudding and 1 box of vanilla. I've made this several times for my husband and we both love it.

Cheryl's Spinach Cheesy Pasta Casserole
This is delicious! I make it once every couple of months or so but changed it up a bit. I use extra virgin olive oil, 1/2 package of Italian blend shredded cheese and 1/2 pkg of sharp cheddar along with Barilla Plus rotini pasta. I buy two jars of different types of pasta sauce (24 oz) and use all of it. And to give it a little more flavor, I add a clove of garlic after squeezing it through a garlic press. Also, be sure to get any water out of the spinach before adding it to the mixture. My non-vegetarian husband loves this as a main dish as well, and we always have plenty remaining for leftovers.
