Super Summer Salsa

I followed the instructions exactly with great results. It does make a big batch, so buy plenty of chips! I served the salsa with blue corn chips--yummy!

Chicken Vegetable Potpie

This is a great recipe. I followed the suggestion of others and substituted chicken broth for water. I also used a double crust in an 8-inch pie plate. I had to bake a few extra minutes, but the end result was great. The pie made was enough for four large servings. Thanks for this winning recipe!

Italian Pasta Veggie Salad

I really like this fresh, easy recipe. I had to add a little more dressing because it was a little too dry to start with. I also sometimes add a few chunks of cheddar cheese and salami--yum!

Delicious and Easy Mock Risotto

Chocolate Cookie Pizza

I goofed and bought a 14.75" pizza pan instead of the 12" recommended in the recipe. Therefore my first try was a mess. However I figured out the trick the second time--double the cookie recipe and bake for 20-25 minutes. Make 1 1/2 times the frosting recipe and you get a nice thick layer of chocolate. Being a peanut butter lover, I topped with Reece’s pieces. Yum!

Buckeye Balls II

This recipe is so good I decided to make buckeyes as gifts for my exteded family this year. I did not shift my powered sugar so I had to cut it to 3 cups. I also creamed the butter, peanut butter and vanilla together before adding the sugar. That seemed to make them smoother. I rolled the buckeyes into about 1" balls, which gave me about 4 dozen, so I had to use 1 1/2 times the chocolate mixture to cover them. All in all a very easy recipe that I know will become a family favorite!

Peanut Butter and Jelly Oatmeal Pancakes

I made two changes based on the other reviews. I cut the milk (1%) to 1 1/2 cups. I also increased the peanut butter to 1/4 cup. The pancaked cooked up fat and brown. The results were so good even my picky 16 month-old liked them. We didn't have strawberry jam, so we just used syrup. One warning--if you are looking for a pancake with a traditional consistency, this is not for you. These pancakes are thicker and heavier than their traditional cousins--perfect for a warm, filling evening meal.
