It's Chili by George!!

Amazing chili!! We ate chili the first night then I used this chili to top enchiladas the next night.. SO GOOD!!!

Chicken Spaghetti Casserole I

Loved this recipe!! I did make a few changes based on other peoples recommendations and what I had on hand. I cubed 3 boneless skinless chicken breats, chopped 1 red pepper, 1/2 yellow pepper, 1 serrano pepper and 2 cloves of garlic . I put olive oil in a large frying pan and added the above. I seasoned with salt, pepper and rotisserie chicken seasoning while it cooked and removed it from the heat when chicken was cooked through. I also used 1 can cream of mushroom and 1 can cream of chicken and 1/4 cup of chicken broth as recommended by others. My boyfreind said it tasted like chicken pot pie with noodles, he loved it!! Definitely falls into the catagory of 'comfort food' I will be making this again. Thanks for a great recipe!!

Quick and Easy Brownies

Great recipe!!! I did decrease the flour to 1 cup as suggested by someone else which makes them less cake like and more like I personally like my brownies. I then added 1 cup coconut flakes and 1/2 cup chopped pecans... Can you say "German Chocolate Cake Brownies"? Delicious. Thanks for a great recipe even though I get carried away and change recipes up a bit.

Spicy Tortilla Roll-Ups

I made these for a party and they were a HUGE hit. I make them now to put in my daughters lunchbox for school. She loves the them and its a nice change from sandwiches.

Slow Cooker Chicken Taco Soup

I did change this recipe a bit because I did not have tomato sauce on hand. I used 1 can of enchilada sauce instead. I did chop up a jalepeno pepper and throw it in also. Next time I will use spicy enchilada sauce to 'turn up the heat' a bit on this delicious recipe. Thanks for an awesome recipe!!

Quick and Easy Shrimp Fajitas

I used a few things I had on hand which turned out GREAT. I had cooked shrimp that I chopped. I added the juice of 1 lime and a package of taco seasoning. I let that 'marinate' while I sliced up 1/2 a yellow pepper, 1/2 a orange pepper and 1/3 onion. I mashed up 1 avocado and added a little garlic salt to that. Chopped cilantro, shredded pepper jack and fresh salsa were all used to top a doubled corn tortilla. My family died and went to heaven... Thanks for amazing recipe to get me going with what I had on hand. YUM

My Thai Chicken Wraps

Really enjoyed this recipe. The only thing I added is some sliced green onions... I bought a rotisserie chicken at Costco, they are usually pretty big so I have leftovers which is great, we love leftovers. Im sure it will be excellent after the flavors marry further. I will definitely make this again!!

Baked Beef Stew

Loved this recipe, I did change a few things. Firstly I doubled the recipe so we would have leftovers since I am a big fan of that. I did dip the meat in flour and brown lightly in olive oil. I used beef broth instead of water and I threw in a package of onion soup mix. I did not use any bread or tapioca. The flour I used on the meat helped thicken the gravy. This recipe is a keeper and will be making it throughout the winter, great comfort food. :)

Chicken and Dumplings IV

Really enjoyed this recipe. I did make it more like my mom does by boiling a whole chicken. I used 1 box of chicken broth then covered the chicken with water and added some boullion to give the broth extra flavor. I used 2 whole carrots, 2 stalks of celery, 2 bay leaves, and added some garlic salt. I simmered the chicken for about an hour till it was ready to fall off the bone. I removed it from the broth to cook before tearing into bit size peices, I used cornstarch to thicken the broth and threw the chicken back in. I used Bisquick for the dumplings and followed the directions on this recipe. I served with canned cranberry sauce and fresh green beans. Everyone went back for seconds. YUM!

Chicken Tequila Fettuccini

Tasty recipe. I only gave 4 stars because I had to make some changes. I did double the sauce and made added a couple serranos and a small peice of habenero.. we like it hot. The heat mellowed. I only used 3/4 of a package of fettucini noodles. I marinated chicken breats in a soy sauce, tequila and lime juice for about an then grilled them. Cut into bite size peices then added to the pepper mixture to warm. I didnt overcook the pepper mixture as I dont like mushy veges. It was delicous and will definitely make again and again!!

Meatball Sandwich

Really enjoyed this recipe. I would recommend slicing the meatballs before putting them on the bread just for the ease of eating. I topped with spicy sliced banana peppers for more zip.

Angel Hair Pasta with Shrimp and Basil

This dish was absolutely delicious!! I used (3) 14 oz cans diced italian tomatoes (drained one) I then added 1/4 cup of heavy cream, 3 tablespoons tomato paste, red chili flakes and salt and pepper to taste as another reviewer suggested. This was easy to prepare and tasted like gourmet italian. Awesome, will be making this again and again.

Savory Meat Loaf

Loved this recipe! I did throw some more stuff in just like my Mom does. I added 1 can of chopped green chile, 1/3 cup salsa. I used 1 whole medium sized sweet onion and a dash of worcheshire. Boyfriend loved it so much I packed him a meatloaf sandwich for lunch today topped with a pickle and pepper jack cheese. Thanks for the great recipe.

Pecan French Toast

YUM!!!! Love this recipe!!! I didnt soak it overnight and it was still delicious. I turned it a few times in about 10 - 15 minutes time and it turned out wonderful. I also used my electric griddle to cook it and then I added a little butter cube on each piece and sprinkled it with the chopped pecans... this was a great hit and I'll be making this one again.. especially for company since it was so easy and so tasty!!!

Loved the easy and taste of this recipe!!! I agree with a couple others that it doesnt really need the extra cinnamon and sugar at the end. It's sweet enough. Delicious.. I'll be making this one for years to come for sure!!

Pumpkin Butter

Made this last night and I agree with the popping and needing to stir constantly that would be the only drawback. Will make in a crockpot next time to see how that works. I doubled the batch since Im planning on using these to 'spread' holiday cheer, double batch yielded 9 jelly jar size. I did use 2/3 white sugar the rest brown sugar. I tend to think the original recipe is definitely not too sweet and I could see how some would want it even sweeter. The ginger gives it a nice snap of flavor. This recipe is a keeper!!

Sweet and Sour Meatballs III

Huge hit with hubby and teenagers. I hesitated to tell them the ingredients but my family doesnt freak out over stuff like that and they were all amazed how good they turned out. Will definitely use this again.
