Easy Taco Skillet

1 3/4 cup was enough water given the amount of juice on the brand of diced tomatoes I used. After tasting, I added a small can of green chilies, My husband and I enjoyed it like this and our teenage son liked it spooned into hard taco shells and then topped with the lettuce and cheese.

Oz's Banana-Nut and Raisin Bread for ABM

This is a lovely yeast bread. It's wonderful as breakfast toast. I like to substitute 1 of the cups of all purpose flour with 1 cup of whole wheat flour.

Dad's Leftover Turkey Pot Pie

Used 2 Tb canola oil instead of butter. Substituted a frozen oriental stir-fry vegetable mix for the celery and frozen vegetables listed. It was still excellent. I think the use of a good chicken broth is important to this recipe. I use Victorian Epicure Inc. Chicken Bouillon Base which is also quite low in sodium.

Big Al's K.C. Bar-B-Q Sauce

Lisa's Favorite Carne Asada Marinade

I could not find canned chipotle peppers, so I substituted 1 tsp. Tabasco Chipotle Sauce. I marinaded the steaks for 36 hours, cooked them on a "George Foreman" style electric grill and they were wonderful.

Bread Machine Pizza Dough

This is our absolute favourite pizza dough (and we've tried many). The low alcohol beer sold in grocery stores is cheaper than regular beer and works well with this recipe. We sometimes substitute 1/2 whole wheat flour with great results.

Baked Spaghetti I

My 10 year old loves this. I use leftover cooked spaghetti noodles, low fat medium cheddar and a larger tin of tomatoes. After the 10 minutes of simmering I drain off most of the excess liquid and the end product comes out fine. Just make sure you wisk the soup and water well. This casserole is easy to assemble in the morning and then pop in the oven when one gets home from work. Enjoy.

Burger or Hot Dog Buns

I've found the secret to making these great is to allow the longer rising time as suggested by others. (One or even two hours is fine.) I substitute 2 cups of whole wheat four for 2 cups of the white flour. I add a tablespoon of gluten flour and let my bread machine do the kneading. Then I shape the rolls and head off to church or take my son to a movie matinee while they rise. If you let them rise on parchment paper, you can slide them onto a preheated baking stone without disturbing them. Enjoy! (Riverview, New Brunswick)

Italian Style Brunch Cakes

My 9 year old loves these and has nicknamed them 'pizza pancakes'! Keep the batter thin and keep them small to ensure they cook through. We also cut back on the green and red pepper. (Riverview, New Brunswick, Canada)
