Snow Flake Cocoa

Reviewed: Dec. 15, 2012
I really dislike giving negative reviews, but I wasn't fond of this recipe. I agree with another reviewer who said it tasted like warm vanilla ice cream. And it is extremely rich. I was able to salvage it by adding more milk (I only made a 1/2 batch to begin with), 1/2 tsp. peppermint extract, and candycanes for stirring. My whole family enjoyed it that way! I'll make it again (without the cream) and peppermint for a holiday treat...

Southwestern Turkey Soup

Reviewed: Dec. 22, 2011
Love it! Easy and delicious! Added a can of black beans. I didn't feel the love with avocado, but everything else was perfect! This recipe would be versatile too, depending on what you have on hand. Thank you for a new way to use leftover turkey!

Rich and Creamy Roasted Eggplant Soup

Reviewed: Oct. 24, 2011
I love this soup! Who knew eggplant could taste so good?! I have to admit the appearance of this soup is not so appealing, but one taste will convince you! My soup was rather thin, so after my first taste, I added some red lentils, which thickened it nicely and complimented the flavors well. Reheated well in microwave for lunch the next day.

Blackened Tilapia with Secret Hobo Spices

Reviewed: Jul. 22, 2011
I do not like fish, but my husband loves it, so occasionally I will try a fish recipe. This could make me actually look forward to eating fish! I followed the recipe exactly, except used cod and grilled it. Served with my favorite grilled zucchini and I was sopping up the juices with my zucchini. Thank you, Hobo, wherever you are!

Spinach Lasagna III

Reviewed: May 3, 2011
This was my first attempt for a meatless lasagna, and despite the comedy of errors on my side (not enough noodles, spilled Romano all over the floor so omitted, only had about 1 cup of tomato sauce, etc.), this turned out really well! My husband and children really liked this. I'll make it again and perhaps get the Romano in the dish next time....

Dark Chocolate Cake II

Reviewed: Apr. 26, 2011
OMG! So good! I made this two times in two weeks. And each time it was gone in two days! No icing needed for this cake! My only complaint is that I couldn't get it out of the pan in one piece--and I greased and floured the second time. I think that may be more of an issue with the cook rather than the recipe.... *sigh*

Hearty Halibut Chowder

Reviewed: Apr. 26, 2011
This was really, really good! I do not care for fish, but my husband does so I try to find ways to put it in our diet. While not the lowest fat fish entree, it is certainly delicious! I will make this again!

Grilled Garlic Parmesan Zucchini

Reviewed: Aug. 20, 2010
I took this recipe as a really good starting idea. I rubbed all sides of my zucchini wedges with olive oil, sprinkled on freshly minced garlic, freshly ground black pepper, and parmesan cheese. Placed on the grill and it's fabulous! Be careful to not overcook these, they turn rather mushy but still tasty!

Summer Squash Chicken Alfredo

Reviewed: Aug. 14, 2010
Really tasty. I just sauteed the chicken and veggies, then added the sauce. Served it over whole wheat spiral pasta. I've always struggled knowing how to use yellow summer squash and now I've got a somewhat healthy use for it.

Marinated Grilled Shrimp

Reviewed: Aug. 6, 2010
This is sooo savory! Even my vegetarian husband sneaked a couple and agreed. I've made this several times and have marinated as long as 6 hours and as short as 30 minutes and found no difference in flavor. I put cold leftovers on a salad the next day.

I made this many, many times this summer. Tastes just like what I've ordered at a bar.

Marrakesh Vegetable Curry

Reviewed: Nov. 1, 2009
Really, really good! I omitted the eggplant (didn't have one on hand) and increased the curry powder as others noted. I used 2 cans of garbanzo beans. So flavorful and made a lot! It reheated well for lunch the next day. Will definitely make this again!

Spaghetti Squash I

Reviewed: Nov. 1, 2009
I've never been much of a squash fan, but I really, really like this! I used what I had in the house: sun dried tomatoes, feta, an entire small can of sliced black olives, a dash of olive oil, and fresh basil. I forgot to saute any onion or garlic. Delicious! Full of veggies and healthy oils! This will be a regular at our house!

Pumpkin Cream Cheese Muffins

Reviewed: Nov. 1, 2009
I made two small changes: I used pumpkin pie spice and cinnamon and I omitted the nuts. They were a big hit with my kids, husband, and co-workers! I got 24 muffins out of this recipe. I will be making them again!

Oatmeal Whole Wheat Quick Bread

Reviewed: Jan. 22, 2008
Excellent! I made the recipe as written, including baking at 450. It turned out wonderful. We finished the loaf in one afternoon. I am so pleased to have found a whole grain quick bread without eggs (allergies) that actually tastes good. Thanks for the recipe!

Indian Dahl with Spinach

Reviewed: Jan. 22, 2008
Just a tad bit soupier than I expected, but very good flavors. Next time, I'll cut back on the water a bit. It was quite filling too. Hubby went back for seconds. Thanks for the recipe!

Baked Sweet Potatoes

Reviewed: Jan. 20, 2008
Tasty taters! While the seasoning was just fine, I'll experiment with it a bit to find something that suits my taste a little more. Perhaps some cumin or cinnamon instead of the oregano. A good recipe to start with for a savory potato. Thanks!

Snow Ice Cream II

Reviewed: Jan. 20, 2008
Snow ice cream is not about creamy, gourmet ice cream. It's about gathering snow together in between making snow angels and snowball fights, celebrating winter, and making memories. Today, we made a memory. Thank you!

Garden Fresh Tomato Soup

Reviewed: Jan. 18, 2008
Delicious! After reading that so many left out the cloves, I decided to try them. I didn't have any whole cloves, so I added two dashes of ground cloves instead. I am so glad I tried it! The cloves add a subtle savory flavor without overpowering the tomato. I used 1 quart of home-canned tomato juice/sauce and veggie broth instead of chicken. I didn't think it needed any sugar at all and just a sprinkling of sea salt. Yummy! I'll definitely be making this again. As much as I like the cloves, the recipe is quite adaptable to season to your taste. Enjoy!
