Gourmet Mushroom Risotto

This was the best risotto I have ever had! I did however use this as a main entree, so I added asparagus and prosciutto and reduced the amount of mushrooms. I cooked the asparagus w/the mushrooms and added the prosciutto to the rice when I added my last 1/2 cup of broth. No salt necessary.

Sambusaks (Sumboosaks) with Chickpeas

Not a dough maker, this came out perfect. The dough was. A little dry so I just added a little more warm water. I did some w/eggs. You should use small eggs, as you will have more room for filling. I also only needed 27 seconds in my microwave. At 40 sec they blew up. My husband loved them and we served with Tapitio.

Chicken Tortilla Soup I

Made this for 64 persons - only change was instead of canned green chili peppers, I roasted my own Pablano Peppers in the broiler. It was the hit of the banquet and I had some guests say it was the best Tortilla soup they have ever had.

Coast's Turkey Chili

When roasting Poblano's just put in broiler and rotate intill all in blackened, then throw in a ziplock until cool to peel. You can also blacken on top a gas stove top. I also used the leanest turkey as that is all they had, so you need a little more oil, since there is no leftover fat. Served this at a Christmast Pot Luck and it was a hit! Full of flavor and very easy to make.

Chicken Breasts with Balsamic Vinegar and Garlic

Simple easy dish. I used used Crimini and Button mushrooms, along w/vegatable broth. We had big breast and they came out very tender. Served over egg noodles.
