Thai-Style Peanut Sauce with Honey

I also used this sauce on a Thai Chicken Pizza, which I topped with bell peppers, shredded carrot, dry chinese noodles, and green onion. It was unbelievable! Everyone at the pizza party loved it and I will definitely try this sauce on kebobs or other dishes! Lime juice would be a good addition too.

Boilermaker Tailgate Chili

Won 1st place in local community chili cook off! I intended to use real bacon instead of bits, but accidentally burned it. Too many beans, recommend only 3 cans. To get a nice consistent mixture, chop veggies (except chilies) into bean-sized pieces and saute them with garlic before adding to pot. Also break up meat to bean size. To improve texture, I used crushed tomatoes (pureed works too) for one of the cans. And after it's cooked for a while, scoop out some of the liquid that comes to the top before stirring, otherwise it's too runny. Add Tabasco last, 1/2tsp at a time, tasting until desired spicyness is achieved.

Mexican Stir-Fry

Very tasty! Used a teaspoon of chili paste instead of jalepeno pepper, and I blended a 14oz can of stewed tomatoes to make the paste. I put in the whole can in place of the water. Will definately make this again. I might try adding some frozen corn to add more variety to the flavor.

Potato, Broccoli and Cheese Soup

Excellent soup! I'd recommend this recipe to anyone who likes/loves broccoli. I also added diced ham to turn the soup into a full meal.

Sweet Orange Chicken II

This is very sweet and delicious. I added cornstarch to thicken the sauce a bit more and use chicken breasts instead. The sauce rehydrates the dried cranberries really nicely while it boils.

Apple Cake I

Though mixing the thick batter is physically taxing, it is well worth the effort for this delicious dessert. Using Splenda and Canola oil keeps the fat and calories down and the result still tastes great!
