Hot Corn Dip

YUM! I added fresh tomatoes and a can of green chiles instead of the canned diced tomatoes/green chile peppers. YUM YUM YUM. I will definitely make this again.

Ten Minute Enchilada Sauce

Authentic and delicious. I used 1/2 the amt. of chile powder because I'm a little gun-shy with REALLY spicy food, and it turned out delicious--just the right amount of flavor.

BBQ Dry Rub

It definitely has a paprika taste...not my favorite. I also would cut the pepper in half--it was spicy enough with just 1/8 cup. :)

Hawaiian Chicken Sandwich

Delicious. Love the warm pineapple. I used fresh pineapple and just rubbed the garlic/oregano on the slices before I grilled it. Turned out great. Thanks!

California Chicken Stir Fry

Delicious. I didn't use the pineapple juice, just a little more water and some arrowroot to thicken it up and served it over whole wheet noodles. Yummy.

Pollo Fajitas

I cooked the chicken in the marinade instead of marinating beforehand (short on time...) and it tasted great. I used olive oil instead of vegetable oil. Great recipe.

Summer Style Chicken

this was a good recipe--I would definitely recommend putting some sort of seasoning on the chicken before you cook it, though. And make sure you have plenty of tomatoes to eat with the chicken (since the chicken itself doesn't have much flavor). The zucchini turns out amazing--it's cooked to perfection in the oven. I'll make this again.

Black Bean and Couscous Salad

The cumin is what makes this recipe delicious. I made this for a potluck and ate half the bowl before I even took it...it's yummy! I added lemon juice instead of lime juice and it was still fantastic. I'll definitely make this again....maybe even tomorrow night. :)

Best Big, Fat, Chewy Chocolate Chip Cookie

Simply Fabulous. The vanilla was a bit much--maybe tone it down a bit, but other than that, they were just like you would buy in the bakery. I used 1/2 M&M's and 1/2 chocolate chips. Delicious.

Million Dollar Cake

Yum. After reading the reviews, I expected the frosting to be runny....It definitely wasn't...i wonder if those reviewers weren't using the right size box of pudding? Either way, this was delicious and was a hit for my husband's birtday.

Marinated Grilled Shrimp

SOOO delicious. I also marinated some steak and alternated the steak and shrimp on the skewer. I think it would also be good with some onions or peppers on the skewer, too, if you wanted to stretch the meat with a crowd. I'll definitely make this again!

Rhubarb Dream Bars

Yum. I didn't think these would ever be done, but learned that they set and become firmer as they cooled (I cooked it 10 minutes longer as others had suggested and the middle was still runny, but took it out anyway so the crust didn't burn. It firmed up to bar-consistency as it cooled).

Cottage Cheese Chicken Enchiladas

I've made this a few times and it's still my favorite chicken enchilada recipe. I boiled my costco frozen chicken breasts for about 12 minutes and they were so juicy in the enchiladas--perfect (since I usually overcook and turn them to rubber). :)

Yummy Lemon Salmon Burgers

I've tried a few salmon burger recipes and will stick with this one...the patty actually sticks together and the flavor is good--especially with the lemon/basil mayo. Will make this again.
