Colorado Buffalo Chili

Reviewed: Oct. 16, 2010
Couldn't get buffalo at my store, so made with beef. Husband said it tasted like Stagg chili (which to him is a good thing.)

Pesto Sauce

Probably would be better with pine nuts, but really good as is.

Mystery Chocolate Cake

Reviewed: Oct. 16, 2010
It's not, like, THE BEST chocolate cake you've ever had... but for a cake made with beets in it? It's freaking awesome. I frosted with cream cheese frosting.

Amy's Marvelous Marbled Cheesecake

Reviewed: Jul. 29, 2009
Of course it's a thin cheesecake - you can tell that by the amount of ingredients. If you want the appearance of thicker slices, adjust the quantities accordingly. It's a very good recipe!

Aunt Jewel's Chicken Dressing Casserole

Reviewed: Jun. 18, 2009
I thought this was a great comfort food casserole, that can easily be modified to your family's tastes/needs as desired. I did an 8x8 pan using two chicken breasts, which I boiled in four cups of water with three boullion cubes and some minced dried onion (which I used for the stock in the recipe). Used the full 6 oz. of stuffing, one can of cream of chicken soup, added a can of drained cut green beans, and because I was worried about it being a bit dry, a tablespoon or so of mayonnaise (sour cream probably would have worked great too, but I didn't have any). Mixed it all up together rather than layering, baked at 350 for 35 minutes covered, 10 minutes uncovered. Yum!

Sour Cream-Rhubarb Squares

Reviewed: Jun. 15, 2009
Amazing... like others I used yogurt instead of sour cream, and increased the rhubarb to 2 1/2 cups. Absolutely fantastic. Great as a dessert, and the leftovers are excellent for breakfast!

Grandma Ople's Apple Pie

Reviewed: Dec. 10, 2008
Thanks so much for the recipe - got a lot of "best apple pie ever" comments! To me the KEY is the lattice crust and pouring the sugar mixture over the top - don't shortcut this. It's not hard and it really makes this pie original - the glazed top crust is to die for.

Applesauce Bars

Reviewed: Jul. 28, 2008
I was not expecting these to be so amazing (despite many good reviews) but they were in fact awesome. And easy. Halved the icing because they're so tasty on their own. I have to disagree with those reviewers who compare this to carrot cake - personally hate carrot cake, love these. Hubby ate half the pan for breakfast the next day. Yum!

Italian Breaded Pork Chops

Reviewed: May 19, 2008
This made good pork chops, but it made AMAZING chicken. As other reviewers, I dredged first in flour, then double-breaded (egg then crumbs, egg then crumbs). Made a few chops and chicken breast halves simultaneously, pan-frying and baking in the same dish for the same amount of time. The pork was good, but the chicken was incredibly tender - a great surprise.

BBQ Pork for Sandwiches

Reviewed: May 19, 2008
It really all depends on the sauce you use - I think more than the cut of meat. Use your favorite recipe or, if going storebought, the Jack Daniels' brand is delish for this purpose.

Babe Ruth Bars

Reviewed: Apr. 28, 2008
This recipe was even better than expected, given some of the reviews... I melted chocolate chips and spread them over the top (though 1 cup doesn't quite spread over the entire surface), and they turned out delicious and didn't look too bad either. I actually thought they DID come close to the taste of a Baby Ruth, but maybe it's been too long since I've had one. Anyway, a good recipe, not so super sweet as you might fear.

Grilled Asian Chicken

Reviewed: Apr. 28, 2008
This was great and light. I also marinated for about 2 hours, then cooked the chicken in the marinade at 325 for 35 minutes. Juicy and tasty, not overpowering. A nice summer meal with rice and sauteed vegetables.

Anna's Chocolate Chip Cookies

Reviewed: Mar. 13, 2008
This is a great, basic chocolate chip cookie recipe. I don't know how you could possibly mess it up. Follow basic baking rules of using slightly softened butter and mix in dry ingredients/chips by hand - absolutely delicious. No frills - just your classic choc. chip cookie, great with a big glass of milk.

Napa Cabbage Salad

Reviewed: Jan. 18, 2008
This was a great recipe to go along with a broccoli-beef stir fry. Next time I'll cut down a bit on the oil in the dressing - it separated a bit as it cooled, and the final salad was slightly too oily. Also, as it was my first time using napa cabbage, I made the mistake of trying to shred it in a food processor - just running a knife through to chop finely seems to work best! All in all a delicious blend of flavors, and quite easy to prepare.

Spicy Orange Beef

Not spicy at all, but still good. Left out the orange zest/peel and didn't miss it (I don't like that chewy texture in my orange beef).

Slow Cooker Beef Stroganoff I

Reviewed: Mar. 19, 2007
Husband LOVES this. I also added in about 1.5 tbsp of sour cream and not quite so much cream cheese. Doesn't make all that much, so double it if you're feeding a family or want leftovers.

Chicken Tikka Masala

Reviewed: Apr. 13, 2006
This was really great in my book -- per other reviewers I cut the salt by half and also decreased the cumin in the cream sauce. As modified no one flavor dominated and it had a nice kick. Unfortunately too spicy for my family, but when seasoned to taste still a definite keeper. Served with broccoli -- would also be great with spinach added into chicken and sauce.

didn't like it. the sour cream doesn't belong. i'll stick with one that relies more on mozzarella.

Creamy Macaroni and Cheese

Reviewed: Feb. 23, 2006
This was good but with several modifications/additions. The sauce I think is best with a more substantial pasta - curly cavatappi is great. For a main dish, I added chopped ham and frozen peas and cooked at 350 for 15 minutes. Tuna fish might also work well for kids. As other reviewers have mentioned, without any additional ingredients it would be fine as a side but you wouldn't want to eat a whole plate full for dinner.
