The Dreamiest Peaches

These were really great! But to make it more nutritious, I ommited the cookies, and I cut up the peaches into small cubes when they were done and spread them on 7 grain whole wheat toast with 1 tbsp of organic plain yogurt! Get some fiber, protein, and calcium with your dessert!

Libby's® White Chip Pumpkin Spice Cake

Super moist and DEEEELICIOUS! Everyone loved it (even my fiance, who doesnt care for sweet things!)!! I made a few changes to make it easier on the waistline, though. I used fat-free evaporated milk, substituted the 1/3 c. oil for 1/3 c. unsweetened applesauce, substituted 6 egg whites for the 3 eggs, and only dusted the top with cinnamon and confectioners sugar instead of the glaze. If you are watching your diet or weight, those changes make a HUGE difference in fat and calories! SUPER YUMMY!!! :)

Fruit Cocktail Cake

Yum! This was the first (and definitely not the last) time Ive made this cake, and it was great! Super-moist and sweet! Loved the brown sugar on the top - much better than icing. I threw in a banana because it was a little ripe.. a nice addition to a great cake. Thanks!

Double Quick Dinner Rolls

These were so great! I followed the directions exactly and they were wonderful; although, mine didnt rise to the top of the cups, they still turned out perfect. Made my house smell great too (i love the smell of yeast baking)! :)

Kitty Litter Cake

I made this for my Veterinary Office to thank them for a surgery. They all got a great kick out of it and told us that it was pretty good, having been made with paws (we told them it was a gift from the cats!). The office loved it and the look on everyones face was priceless! I also used an aluminum roasting pan (the kind you buy for turkeys) with the litter-box liner and it was the PERFECT FIT.

Chewy Peanut Butter Brownies

I doubled the recipe since I didnt have a 9x9 pan; however, I did NOT double the salt (peanut butter has plenty of salt in it anyway) and they turned out great. I also used a light layer of chocolate frosting on the top just because I was craving chocolate too. My fiance - who is not a big fan of sweets or chocolate - loved these! Perfect for non-chocolate lovers. :D

Pumpkin Cake II

I followed other users' advice and modified the recipe a little bit. I downed my sugar to 1/2 cup and used light brown instead of white. I also used 1 3/4 cups (same as a 15 oz. can) pumpkin because I really love pumpkin. Also, to be cholesterol - free I substituted my eggs for whites only and used unsweetened applesauce instead of oil. The cake is super-moist and still light and fluffy! I will definitely be making this over and over! :D

Very Berry Muffins

These were very yummy. Not too sweet at all like a lot of muffins out there; in fact, they reminded me of a mini bowl of oatmeal with some strawberries mixed in. :) *Due to my fiances cholesterol, I substituted 2 whites for the one egg and 3 tbs. applesauce for the oil.*

Coconut-Cream Cheese Frosting

i made this without all the coconut stuff as a cream cheese frosting for a red velvet cake. i did not like the consistency [i ended up using 4.5 cups of sugar but i stopped there because i felt i was losing too much of the cheese taste]; i would give that a 2. but the flavor is excellent, i would give that a 5. overall a good recipe.
