Pumpkin Fluff Dip

Delicious! I'm also giving it five stars because it is soooo quick and easy and requires so few ingredients. I used SF-FF pudding mix. I served it with graham crackers but I think it would also be great with ginger snaps like others have tried. It might even be good with chocolate graham crackers.

Iced Pumpkin Cookies

I think these are great, especially considering that they are perfect around the holidays and look very nice too. They have a unique muffin-like texture, rather than the rich, crisp, buttery texture that most cookies have. You can easily make more than 36 cookies out of one batch, and I only used about 2/3 of the icing.

Big Soft Ginger Cookies

Yummy - they are simple but delicious. I followed the recipe exactly, except that I took others' advice and chilled the dough for a couple of hours, I would highly recommend doing this. This will become a regular holiday recipe for me.

Award Winning Soft Chocolate Chip Cookies

An easy, classic c.c. cookie recipe. Mine were not cakelike, although I made sure not to overbake (baked about 9 mins). Will add a pinch of salt next time as others suggested, but I did not find them bland (esp. with nuts!). I halved the recipe and got about 60 sm-med cookies. I used high-quality choc. chips, which I think add a lot of flavor. Thanks for the recipe!

Double Tomato Bruschetta

These were delicious! I chopped the basil and the sundried tomatoes. I could not find sundried tomatoes packed in oil in my supermarket (just ones that were loose, not in oil), so I combined those and the oil in the recipe a few hours before I made it. I also flipped the bread over after toasting it, before adding the topping. I didn't have mozz., so I used a little fresh parm that I was using in my main dish. Yummy!!

Cranberry Hootycreeks

Delicious! Here are my tips: use high-quality white chocolate. I don't think Nestle white choc. chips are very good, so I broke a Ghirardelli white choc. bar into little bits. That worked great. I did follow the instructions and tried to combine the eggs and butter, and they did't get "fluffy" but it didn't seem to cause any problems either (did not "curdle" as other reviewers have feared), so I think you could do that or add the sugar at that stage. Also, I used craisins, which are sweetened, becuase I couldn't find unsweetened dried cranberries at my store. I think I would do this again, they weren't overly sweet. I would cut back on the salt, though. And I also needed to sprinkle a little water on the dough to make it stick together. I will definitely make these again!

Chocolate Mint Cookies I

Delicious and very easy - they actually taste better after they cool and the mint has had a chance to set than they do hot out of the oven. They would be prefect around the holidays. My tips: Don't overcook - take them out while they are still underdone, because they firm up as they cool. Don't make them too small, either, or half an Andes' mint will overwhelm the chocolate taste (walnut-sized balls of dough worked well for me). Also, they will get a tad messy as the mints melt (in less than 5 minutes), so just keep an eye on them and use a paper towel or tinfoil underneath to catch the melting chocolate.

Lime Chicken Soft Tacos

I've made this recipe a few times now. The first time it came out great (tons of flavor), but the second time it didn't come out as well. I think you have to measure the ingredients carefully and not mess around too much- the flavors are all so strong that it's easy for them to get out of balance. But thanks for a way to make chicken, which can be so bland, very flavorful!

Roasted Lemon Herb Chicken

The skin got a little black, but the flavor was great and the recipe was easy. Most of the flavor was in the skin, though -- I would have given it 5 stars if the meat had that much flavor. I had to cook mine about ten minutes longer than the recipe said.

Spicy Rapid Roast Chicken

It's hard to find a recipe with the perfect cooking time and temperature to make a roast chicken juicy, but the skin crispy- this one worked! Also, very easy to prepare and I had all of the ingredients, so I know i'll make this again.

Apple Crumble Pie

I loved this because it was such a simple alternative to rolling out dough for a "real" apple pie." It was delicious (especially the crumble on top)-- only thing I would try to change next time is that it is a little too watery. I might add a little something to thicken the apple mixture.

White Chocolate Covered Pretzels

Time-consuming to make but delicious and festive looking. Less expensive than trying to buy something similar at a fancy choclates store, and tastier than anything similar you could buy pre-packaged at the grocery store.

Insanely Easy Vegetarian Chili

I halved the recipe, so it may not have come out exactly the same, but to me it is closer to a vegetable stew. But delicious, especially considering how easy it is to make! I might try adding tomato paste or some fake meat crumbles to make it more of a true chili.

Oat Applesauce Muffins

Tasty for a healthy muffin. I added a few generous dashed of cinnamon and next time I might add allspice or even pumpkin pie spice. Texture is a little chewy, but moist for such low-fat, low-cal muffin.
