Great guacamole! Like many suggested here, I used purple onion instead of white or yellow and only used 1/3 cup. I love onion, though, so next time I will up it to 1/2 cup. I'm not a big fan of tomatoes in guacamole, so I omitted them. In their stead, I added a chopped freshly roasted red pepper. I liked the red color and smokey flavor it added.
We ate it with Bite Size Tostitos, which are very salty chips. I had reduced the salt to 1/2 teaspoon, and it still seemed a little too salty to me. If I make it again and plan to serve it with salted chips, I might completely omit the salt.
