Simple Scones

These were fabulous! Many thanks to the reviewers who gave the food processor suggestions. These were super easy using it. I made them with 1/4 cup pomegranate infused craisins (my favorite) and 1/4 cup white chocolate chips. Fabulous! I will increase the craisins back up to 1/2 for the next time. I also look forward to trying the variations I read about here. The possibilities are endless!! I baked them in a silicone mini scone pan for 15 minutes in a convection oven set at 375 and they were perfect.

Blueberry Dump Cake

This was fabulous! I used the amounts of the ingredients as listed, but I did not melt the butter. I put about half the dry cake mix over the blueberries, then processed the other half with the butter in my food processor until it was crumbly and then spread that over the top. Topped it all off with some homemade vanilla ice cream and it made a real treat. I really can't get over how good this was to have been so easy. The family has already asked for it again!

Mushroom Sauce Baked Pork Chops

This was very good. A down-home style dish. I made two small changes: substituted 1/3 cup sour cream for the milk and skipped the potatoes, preparing mashed potatoes as a side dish instead. This recipe made plenty of gravy, which as excellent on the mashed potatoes. This will definitely stay in my recipe box.

Alyson's Broccoli Salad

Very tasty dish. I have to admit, it didn't sound like it would be very good, but it really is! I made it per the recipe, just substituting Splenda for sugar and using low fat mayo. It sure seemed like A LOT of sunflower seeds but I put them all in anyway and glad I did, as they added a nice crunch. I used golden raisins and some craisins. Very good and easy to prepare ahead.

Hot Spiced Cider

Very good and very easy. Doubled everything but the sugar (kept it 1/4 cup). Heated it to boiling on the stove to thoroughly dissolve the sugar, then let it heat in the slow cooker. As others have suggested, I put the spices in a coffee filter, closed up with a twist tie. Everyone loved it.

Mashed Potato Casserole

Very quick and easy and quite tasty. Feeding just two for supper, I halved the recipe, but rather than using half a container each of cream cheese and onion dip, I just used one whole (8 oz) tub of the Chive & Onion Cream Cheese. Added about 1/4 cup of bacon bits too. I will definitely make this again. It will probably be on my holiday side dish list since it can be made up ahead.

Strawberries with Balsamic Vinegar

Baker's Secret Pie Crust

When initially viewing this recipe, I thought it seemed like a lot of ingredients and a lot of trouble. Upon further inspection, however, I realize that it's really not that many ingredients. It seems like a lot of steps but it's just because all of the steps are explained so well. This turned out perfectly for me, and I'm not a very experienced "pastry chef". Flavor was fantastic and it was quite flaky. Perfect.

Guacamole

Great guacamole! Like many suggested here, I used purple onion instead of white or yellow and only used 1/3 cup. I love onion, though, so next time I will up it to 1/2 cup. I'm not a big fan of tomatoes in guacamole, so I omitted them. In their stead, I added a chopped freshly roasted red pepper. I liked the red color and smokey flavor it added. We ate it with Bite Size Tostitos, which are very salty chips. I had reduced the salt to 1/2 teaspoon, and it still seemed a little too salty to me. If I make it again and plan to serve it with salted chips, I might completely omit the salt.
