Apple and Prosciutto Stuffed Chicken Breast

This recipe was lovely -- very light and fresh-tasting. I would definitely recommend a few changes, though. For one, I think "apple pie spice" means different things for different people. I used cinnamon, mostly, but also some ground cloves and allspice. I couldn't find the nutmeg, but a little bit of that would have also been good. Second, I used way way more apples than this recipe called for and I still thought a little more would have been yummy. Definitely be liberal with your apples. I chose three varietals: gala, granny smith, and golden delicious. They went well together. Finally, I think the sauce could have used some salt. All in all, this was a fantastic recipe-- what a great combo! So thanks to the author for sharing!

Banana Chip Muffins I

This recipe was fantastic! I didn't use extra milk or banana (as others have suggested) and they turned out perfectly moist and delicious. I did substitute in oat flour (instead of flour) and sweetened carob (instead of chocolate chips), per personal preference. I also liked someone else's idea of substituting in applesauce for oil -- I'll try that next time! For now, these are a definite winner! The versatility is half the fun!

Healthy Banana Cookies

These are great little healthy cookie bites. Bananas and dates make a great sweetener and if you add a bit of cinnamon, cloves, allspice (or whatever), they end up tasting like little banana bread bites. Very good. Very addicting. If you like your cookies sugar-sweet or crispy, then they aren't for you. Sweetness relies on the ripeness of the bananas and sweetness of the dates (so they could be very sweet or only mildly so). Cookies turn out soft. I loved them, and will definitely make them again.

Celery Wine Baked Chicken

Yummy dish! I substituted cream of celery soup with lowfat/sodium cream of celery soup, sour cream with low fat sour cream, and garlic powder with a bit of real garlic and it turned out very tasty! Tasted even better as leftovers!
