Better-Than-Olive Garden(R) Alfredo Sauce
Yes, yes, yes! I love alfredo sauces when I go out, but before now have never found a recipe I could master in my own kitchen. Creamy and quick and actually worked pretty well as leftovers. My only tweak was to substitute 1/2 cup whole milk for 1/2 cup of the cream (to lighten just a little). I used wet mozzarella and it melted just fine. I served with sauteed chicken and steamed broccoli tossed in. Excellent.

Autumn Lentil Soup
LOVED this soup. So simple and so yummy. Only a few minor changes, mostly due to what I had on-hand: I didn't have dried minced onion, so that got left out; I had fresh parsley, so I doubled the amount and used that; I liked the carrot and cilantro idea, so I added those (shredded carrot in with the onions, cilantro added to the finished soup); I cooked it for only an hour once all the ingredients were in-- the lentils were well soft by then. Such a wonderful, light, fall soup. I'm so glad I have leftovers!

Apple and Prosciutto Stuffed Chicken Breast
This recipe was lovely -- very light and fresh-tasting. I would definitely recommend a few changes, though. For one, I think "apple pie spice" means different things for different people. I used cinnamon, mostly, but also some ground cloves and allspice. I couldn't find the nutmeg, but a little bit of that would have also been good. Second, I used way way more apples than this recipe called for and I still thought a little more would have been yummy. Definitely be liberal with your apples. I chose three varietals: gala, granny smith, and golden delicious. They went well together. Finally, I think the sauce could have used some salt. All in all, this was a fantastic recipe-- what a great combo! So thanks to the author for sharing!
