Bacon Mushroom Swiss Meatloaf

We really loved this recipe, but I did make some changes. I honestly couldn't see using 3/4 of a pound of bacon no matter how much I love the stuff, so instead I reduced it to 5oz of premium applewood and used 2 lbs of ground beef. For seasoning I added minced garlic to the mushroom and onion and a tsp of worchestershire sauce. Didn't have any corn flakes so used my normal crushed saltines. Everyone loved it and truthfully there was more than enough bacon flavor without so much fat.

Rye Beer Bread

I really enjoyed this recipe. I used a dark oatmeal stout, mixing a tablespoon or so of molasses along with the remaining sponge ingredients to sit overnight. To raise, I heated my oven to 200' then turned it off and put the bread in the oven loosely covered with parchment to double. I divided the dough into two bread pans to bake. Before placing in the oven I slashed the top of the loaves with a very sharp knife, to allow the bread to rise better. The resulting bread is chewy, beery, and yeasty-- awesome!

Quinoa and Black Beans

Fantastic! I've been trying to find a quinoa recipe that would please everyone and this is a winner. I added about 1tbls of chile powder for extra spice and diced a zuchinni for extra veggie. Was a big hit and will make again.

Enchiladas Verdes (Green Enchiladas)

Wonderful enchilada recipe, the store didn't have anaheim peppers so I used poblano instead and used 3 jalepeno for heat. I also charred the peppers on the grill and the chicken breast too for depth of flavor.

English Muffin Loaves

Outstanding recipe. I found adding an extra 1 tsp salt and 1/2 tbls of sugar boosted the flavor immensely. I agree that decreasing the flour to make the dough more batter like allows those lovely bubbles to develop. Love this bread.

Chewy Cocoa Brownies

Excellent brownie recipe, dense, very chocolatey and not too sweet. This is the second time I've made them. The first time I followed the recipe completely with no changes with great results. This time I've substituted some of the sugar with Splenda to try and reduce the carbs . I used 1 cup of white sugar and 2/3 cup of Splenda with good results. Next time I plan to use 1cup of splenda instead. Pretty perfect to satisfy my chocolate craving.

Guinness® Corned Beef

Because I'm not a fan of dark stouts like Guinness, I was hesitant to do this recipe. I doubled the recipe for 8 lbs of beef and used 2 cans of Guinness plus enough water to cover. I added 6 cloves of lightly smashed garlic and the spice packet. Baked it for 5 hours, then wrapped the meat in foil to rest. Cooked the veges on top of the stove with some of the broth. This was the best tasting corned beef I've ever made.

Clare's Whole Wheat Potato Bread

Excellent bread recipe, will be my go to for wheat bread from now on. Has a great texture, very soft instead of heavy and dense as wheat bread tends to be. My only changes were to use butter instead of margarine, increased the honey to 1/3 cup and I did need extra flour but it's super humid in KC. Made three big loaves, one of which was gone within a couple of hours. Used my kitchen aide to do the kneading with the bread hook for 10mins. For those who said the bread didn't rise well, you might want to alter to steps and proof your yeast with the warm water separately, then add the rest of your ingredients. Also kneading thoroughly makes for better crumb and structure.

High Rise Dinner Rolls

Excellent roll recipe. they were very easy and so tasty. the only change I may make the next time is to skip the additional salt as the potato flakes I used had salt already added and the additional salt made them just a bit too salty for my taste.

Mushroom Orzo

Excellent recipe- I've never really known what to do with orzo. Even my daughter who normally won't eat mushrooms or onions thought this was great. Followed the recipe exactly the first time, second time I used chicken broth for the water for a little extra flavor. Quick and easy and a definite keeper.

Jalapeno Cheese Bread

Fantastic bread. I made several loaves for Christmas gifts, and everyone loved it. I made it fairly mild because of family taste, but I found a jalepeno cheese gave the taste of the chile without as much heat. I also boosted the flavor with small can of mild green chiles. Great companion to soup.

Excellent cookie and very easy. After making them once, decided they weren't as spicy as I'd like so I doubled the cinnamon and ginger. I also added a 1/2 tsp of fresh ground black pepper for an extra kick. Very good

Foolproof Rib Roast

Absolutely the easiest way to make a rib roast. Simplest is always the best. I did add an herb mix from penzeys as part of the crust. I timed my rolls to be ready to go into the oven when the meat came out to rest before carving and it all came off beautifully. I'll never make my roast any other way from now on. Thanks Salsiepie

Cheeseburger Soup I

My family really enjoyed this soup. I did change the recipe slightly--I added 3/4 cup of chopped broccoli, and 1 tsp of garlic powder, and black pepper. It's even better the next day.

Very good cookie--I'll add a bit more cinnamon, nutmeg and allspice next time, but this is a really good oatmeal cookie. They were gone in about 24 hours.

Banana Crumb Muffins

Salisbury Steak

Really good, even my picky teen daughter liked it. I did some changes, I added 1/4 cup of cream of mushroom soup to the meat mixture along with a packet of onion soup mix too. To the gravy , I added about 1/2 cup red wine and sliced fresh mushrooms. After the meat had simmered on the stove, I added 1/4 cup of sour cream. Definitely a keeper.

Rosemary Ranch Chicken Kabobs

Great flavor, i agree that the marinade seemed a bit salty but the meat didn't seem to be. I added mushrooms and grape tomatoes to the veges. My skewers went missing so I ended up making foil packets on the grill instead. Turned out fantastic anyway.

Five Flavor Pound Cake I

A fantastic cake, it has a perfect pound cake density, and is very moist. My kids don't like coconut so I used almond flavoring, although I think the flavors can be pretty interchangeable. It totally filled my bundt pan, I'll probably use 3 loaf pans next time. Very important to grease and flour the pan.

Boilermaker Tailgate Chili

This is absolutely the best chili I have ever had. My family likes a little milder chili, so I used a large poblano chili pepper that I roasted and I used a whole can of beer. It takes a little more prep time, but it is well worth the effort
