This batter was a little runnier than I like, making it hard for the pancakes to hold their shape. The flavor was nice but they didn't rise very well, leaving me with a fairly dense, flat pancake. I put 1 cup of quick oats in my mini food processer and ground them up fairly finely, then added it to the batter along with 2 Tablespoons of ground flax seed. This added more flavor and substance to the pancake. Overall, I probably wouldn't use this recipe again, even with the adjustments I made to the batter after the first batch of flopped pancakes.
