Pancakes I

This batter was a little runnier than I like, making it hard for the pancakes to hold their shape. The flavor was nice but they didn't rise very well, leaving me with a fairly dense, flat pancake. I put 1 cup of quick oats in my mini food processer and ground them up fairly finely, then added it to the batter along with 2 Tablespoons of ground flax seed. This added more flavor and substance to the pancake. Overall, I probably wouldn't use this recipe again, even with the adjustments I made to the batter after the first batch of flopped pancakes.

Nanna's Banana Bread

Quick and Easy to make, but tastes absolutely delicious. I followed the recipe exactly and was really happy with the delicious flavors of banana with a hint of cinnamon! I am going to teach my 11 year old how to make it today - it is simply enough that he will be able to make it on his own, once i've shown him how to do it.

Mom's Chocolate Chip Cookies

I found these cookies a little sweet, so I remade them, but in the second batch I left out the white sugar, replaced the semi-sweet chocolate chips with milk chocolate chips and added 1 cup of crushed almonds. My family and I enjoyed the second batch much more!

I split this into 6 pieces, kneeded them quite thin, covered the top in brown & white sugar & cinnamon then baked them in the oven @ 350 for approx 25 minutes. I let them cool, then served them warm with vanilla ice-cream. Delicious!!

Crazy Cake

A delicious cake.... the most moist chocolate cake I have ever eaten! Tastes great as a Black Forest Cake with Cherry pie filling and whipped cream, or more simply; with cream cheese icing!

Amazing Pecan Coffee Cake

Delicious! The sour cream adds a 'cream cheesy' flavour. I will definately make this again! Tastes great warm, fresh out of the oven with a glass of milk! Yum!

Potato Chowder Soup I

Yummy Soup! My kids gobbled it up and asked for seconds. Before adding the butter/milk mixture I put half of the cooked veggies in the blender. This made the soup extra creamy. Next time I will use chicken stock instead of water for a little fuller flavour. Easy recipe - I will definitely make it again!

Peanut Butter Cookies VII

The batter seemed a bit too crumbly, so I added a couple tablespoons of milk. The end result was a delicious, not too sweet melt-in-your-mouth cookie! My family loved them, and I will definately make them again!
