Southern Macaroni and Cheese Pie
The BEST mac-n-cheese recipe I have made so far, and easy!!!! Here are the modifications I made and it turned out perfect: - used one teaspoon of pepper instead of 1 tablespoon - used more cheese (8 ounces of cheddar, 16 ounces of sharp cheddar-- I saved about 1 cup of the sharp cheddar until the end to sprinkle on top of the whole dish - added cubes of smoked ham YUUMMY FLAVOR! - I didn't do the layering in the pan, I just mixed all the ingredients into the big pot with the egg/milk mixture - I didn't use regular salt, I just sprinkled Lawry's seasoning salt after all the ingredients were mixed in the big pot, to taste, right before I poured it all into the baking pan -I had to cook about 25-30 minutes in my oven My family really enjoyed it!!!

Maple Salmon
I am on a low-carb/low-sugar diet. I used sugar-free syrup (Mrs. Butterworth's). This was delicious, healthy, and extremely easy to make. I marinated fish in TRIPLE the amount of marinade, in a ziplock (pressed all the air out), in the fridge. I lined an 8x8 square baking pan with foil (for easy clean-up). I poured the fish and ALL the marinade in the pan. The fish cooked in the marinade, leaving lots to spoon on top of the fish when I served it. It was AWESOME! This will be a regular for me! Thank you for this time-saving, delicious idea!!

Mushroom Pork Chops
I made a super-simple version of this in my slow cooker. I seasoned the chops with garlic powder, onion salt and pepper -- then browned. I then poured half a can of Campbell's 98% fat free cream of mushroom soup into the cooker, placed two boneless chops in the soup, then poured the remaining soup on top. I covered crock and cooked on low for 2 hours! The meat was SOO tender and delicious! It was absolutely perfect and EASY!! NOTE: it is always recommended that you fill your slow cooker at least half full... however, I cooked those two chops in my 5-quart cooker (which was no where near half) and it turned out great. If you use more than two chops, simply extend your cooking time. Whenever I try a new recipe like this, I like to make only 1 or two servings first to see if I like it so that I don't waste any food (by throwing it away if we hate it).
