Fresh Corn and Zucchini Saute

Made this tonight...I used two T of olive oil instead of butter. I added some diced green pepper. It was delicious and tasted so fresh!

Oatmeal and Wheat Flour Blueberry Pancakes

I made some adjustments according to what we had on hand. I used buttermilk instead of soy milk. I used vegetable oil instead of olive oil. I processed my oats in the blender first so the were more like flour. And, for the flour, I used a cup of white whole-wheat flour. I didn't add the blueberries directly to the batter, rather I dropped them into the pancakes as I put them on the griddle. Also, as with any pancake recipe, I did not over stir the batter - you want to stir just until everything is moistened. Once you have done that, let the batter rest a good 5 - 10 minutes before cooking; that will give you a fluffier pancake.

Blueberry Sauce

I made this sauce for cheesecake this weekend. It was delicious. I didn't have any orange juice...actually I only had about 1/2 C of apple juice in the house, so I used that and subbed water for the rest of the juice. I used less cornstarch (2 tsp) because I didn't want it to be too thick. I didn't make any other changes - I think you'd be missing a level of this sauce if you omit the cinnamon or almond extract. I received several compliments and it was heaven over the cheese cake!

Fresh Strawberry Sauce

I made this to go over some mini cheesecakes this weekend. It was simple and quick to fix and it was DELICIOUS! Everyone loved it. It made a ton, so I froze half to use later - I'm envisioning pancake and waffle topping...ice cream topping...and perhaps even a chicken dish!

Creamy Chicken With Pasta and Broccoli

I did some tweaking given what I had on hand, and it was delicious! Instead of cooking the chicken with margarine, I sauteed it with some light Italian dressing. For pasta I used a box of mini penne. I used cream of mushroom soup instead of cream of chicken, and I threw in a can of mushrooms to go with it. It turned out so good and the kids LOVED it. We'll definitely have this again!

Seven Layer Taco Dip

Magic Pickle Dip

Excellent! I find it's easier to use a jar of dill pickle relish (don't drain it!). It doesn't *look* pretty but boy does it taste good. Everyone loves it!

Potato Casserole III

A four-star recipe as is. The second time I made it, I used only cream of mushroom soup and omitted the green pepper. I sprinkled French's french-fried onions on the top and the result was heavenly. The french-fried onions give it SUCH delicious flavor!

Basic Yummy Stuffing

I don't like stuffing and don't eat this, but I tried my hand at making it this past Thansgiving, after my MIL passed away (she always used to make the stuffing). The family ate all of this, between the main meal and the leftovers, and all said they thought it was very good. Thank you for letting me keep a family tradition going!

Linnie's Spanish Rice

This was just okay...overall pretty bland. It's a good base recipe though and I plan on tweaking it to get more flavor. I did saute the rice and garlic in a little olive oil first, just until the rice was very white (not brown).

Campbell's® Easy Chicken and Cheese Enchiladas

I used a can of Campbell's Fiesta Nacho Cheese soup (instead of the cream of chicken) and omitted the sour cream. This was delicious! My hubby said they are the best enchiladas he's ever had! This recipe is definitely a keeper.

Giant Ding Dong Cake

This does taste just like a ho-ho or a ding dong! Easy recipe to make...I just cooked my cake batter in two 8-inch round cake pans, then split each in half to make a four layer cake. I put the cream mixture between the layers, then drizzled the chocolate topping over the top and sides. DELISH! Next time I'll try doing the filled cupcakes. My only complaint about this recipe is that I ate wayyyyy to much of it-not the best for my waistline!

Sweet Butter

I was excited to try something new to serve with rolls at Thanksgiving, but I was not impressed with this. It was too sugary...maybe less brown sugar would've made a difference.
