Paella I

This is a wonderful recipe. Granted, I made substitutions, but still wonderful and very reasonable to accomplish without a lot of excessive time and effort. I used pepperoni instead of chorize, since in my area you cannot find the right kind of chorize. And, in place of mussels, I used canned clams. I also substituted part of the chicken broth with clam juice and used turmeric in place of the saffron. I've tried lots of paella recipes, and this one works for my family and me. Thank you.

Nacho Chip Casserole

The only problem was we couldn't stop eating it! I didn't have nacho chips, so I used garlic and cumin and a bit of chili powder to season the meat mixture. I also used Velveeta instead of sliced cheese. It was wonderful. Thanks.

Vikki's Red Bean Sausage

Even without the onion and green pepper (which I didn't have) this was a very tasty recipe. I added some seasoning to suit our taste and served it over white rice. We loved it, and I know I will serve it again. Thanks.

A-Number-1 Banana Cake

Oh my! This was to die for. My whole family loved it. I heard lots of "mmmmm"s. I iced it with a drizzle of powdered sugar icing with mashed banana and lemon juice added to it. Perfect. Thanks.

Broiled Tilapia Parmesan

Amazingly tasty recipe. I used fresh parmesan instead of the jar variety. My husband said it was the best fish recipe I've prepared. Served it with Calypso Rice and steamed broccoli for a great meal.

Salsa Chicken

Rave reviews from my husband and daughter on the flavor of this dish, and a request to make it often. I cooked this in my slow cooker, which turned out great. And I used my own taco seasoning with cumin and garlic powder.

Fruit Cocktail Cake

Very tasty! Perfect served warm on a chilly evening. Easy to prepare with few ingredients and with every measurement being either 1 cup, 1 tsp. or 1 can, it will be easy to memorize and whip up any time. Mine was done in about 30 minutes, so you may want to check it at the end of the baking time.

Chicken In Basil Cream

Wonderful recipe! To save preparation time, I used a packaged "shake and bake" style coating mixture and baked the chicken, then served it with the cream sauce. I added a few mushrooms to the sauce and served pasta on the side. My husband and daughter loved the flavor. Next time I might add artichoke pieces as well. Thanks.

Chicken Stock

Grandma's Chicken Noodle Soup

This is comfort food at its best. Home-made broth, some mushroom slices, and seasoning to taste made it absolutely perfect. My father-in-law walked into the house and asked what smelled so good. I'll make this again. I think I'll try dumplings like other reviewers.

Curried Honey Mustard Chicken

What an awesome recipe! My husband loved it and so did I. We served it with couscous and steamed asparagus. I marinated it overnight, cooked it ahead and stored it in the refrigerator. To heat it up, I heated the chicken breasts and juice in a skillet, which gave it a beautiful brown glazed look and a yummy flavor. This is a keeper.

Brussels Sprouts Bake

Wonderful recipe! My husband said he had never had such tasty brussels sprouts before! Because of what I had on hand, I used part shredded mozzarella and part parmesan in place of the cheddar. And I also used crushed corn flakes in place of bread crumbs. Thanks for a recipe that I'll be using often.

Mom's Zucchini Bread

This is a delicious zucchini bread recipe. Thanks. I substituted 1/2 of the oil w/ plain yogurt and used 1 real egg and 1/2 C egg substitute to make it a bit lower fat, and it was incredible. My mother-in-law and my chef friend both loved it. That says a lot.
