Olive Chicken II

Our family and dinner guests enjoyed this dish last night with steamed rice. I had to prepare the dish early, so I browned the chicken, then put everything together and let it cook in a crock pot on high for 4 hours. During the last hour, I added fresh thyme, and it was wonderful! Thank you.

Chicken In Basil Cream

Wonderful recipe! To save preparation time, I used a packaged "shake and bake" style coating mixture and baked the chicken, then served it with the cream sauce. I added a few mushrooms to the sauce and served pasta on the side. My husband and daughter loved the flavor. Next time I might add artichoke pieces as well. Thanks.

Chickpea Salad

Nice side dish. I combined balsamic and red wine vinegar to equal 1/4 cup combined. This was plenty. I also added a splash of olive oil. Thank you for a healthy, tasty recipe.

Savory Sausage, Cheese and Oat Muffins

These muffins turned out beautifully. They were so tasty. What I had on hand dictated my substitutions: regular butter for reduced calorie margarine, 2 real eggs for 1/2 C egg substitute, packaged real bacon bits for meatless breakfast patties, and cheddar for Parmesan. I was a little freer with the cheddar than the amount in the recipe too. These were a tasty companion to this site's "Creamy Corn Soup". Thanks.

Reuben Sandwich I

Thanks for a quick, easy and delicious recipe. I used thinly sliced smoked turkey breast instead of pastrami, and low fat thousand island to make it a little lighter, and it was fantastic!

Brussels Sprouts Bake

Wonderful recipe! My husband said he had never had such tasty brussels sprouts before! Because of what I had on hand, I used part shredded mozzarella and part parmesan in place of the cheddar. And I also used crushed corn flakes in place of bread crumbs. Thanks for a recipe that I'll be using often.

Orange Curried Chicken

I took some liberties with this recipe, and still it turned out to be very tasty. I substituted apricot preserves for the marmalade and curry powder for the paste. It was very good! My family enjoyed it with steamed rice. Thanks.

Sausage Casserole

I think this is my new favorite breakfast casserole, and a house full of guests this morning seemed to agree. Taking tips from previous reviewers, I used 8 eggs instead of six, used frozen hash browns, baked them first and browned onion with the sausage, adding salt and pepper to the egg mixture. Using what I had on hand, I used a combo of shredded Cheddar, Monterrey Jack and Mozzarella. I served this with chopped green onions and salsa, fruit and muffins. Yummy. Thanks!

Butterscotch Oatmeal Cookies I

I love these cookies and so does my family! Instead of 1 c, I used 2/3 C of chocolate chips and 2/3 c of butterschotch chips and there were still more than enough. I think next time I'll reduce the measurement of each to 1/2 c. Thanks for a great cookie recipe.

Lamb Stew with Green Beans

I used Greek seasoning as suggested by another reviewer, garlic flakes, more cinnamon, and I pureed a can of Italian style stewed tomatoes in place of the tomato sauce. And I served it over white rice. The dish was amazingly good. My husband absolutely loved it.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

Thank you for this recipe. My husband and I loved it. I did not have time to bake it, so I just served eliminated that step. To suit my taste, I added a pinch of allspice and nutmeg and topped the mound of potatoes with a sprinkle of brown sugar. Exquisite with lamb and asparagus and a nice red wine.

Smucker's Chicken Salad with Wild Rice, Pecans, Grapes and Orange Dressing

Using what I had on hand, I substituted Unble Ben's long grain and wild rice mix, apricot pinapple jam and a raspberry walnut vinaigrette. I also added a touch of caraway. The result was very, very tasty! A keeper. Thanks.

Florida Key Lime Pie

Using reduced fat graham cracker crust, low fat sweetened condensed milk and low fat whipped topping, this was a delicious AND healthy dessert. Key lime pie is one of my husband's favorites, and he loved it.

Last Minute Chicken Dinner

This was a really tasty dish that my whole family loved. I cooked the chicken breasts in the microwave, then cut it up. I also precooked the vegetables a bit. I used seasoned salt. I also used fat free milk to make it low fat. We served it over rice. Thanks!

Chicken Stock
