Chocolate Cherry Cake III

This cake was perfect for my daughter's birthday topped with a few chocolate covered cherries. Moist and yummy. It helps to break up the dry mix with a fork before stirring in the other ingredients.

Pecan Pumpkin Biscuits

I followed the recipe exactly, and got a great result. I ate one right when they came out of the oven with butter and honey. Delicious. I think they would be great with a honey butter or maple butter. Thanks, Connie!

Split Pea Soup with Rosemary

Baked Ziti I

With vegetarian dinner guests to feed, I made this without the meat, and served Italian sausage on the side for those who wanted it. I also used a combination of mozzarella & cheddar since I didn't have provolone. My husband can't stop raving about how good it was. Thanks!!

Creamy Corn Soup

I had to stretch this recipe when I learned we would have extra dinner guests. So, I doubled the cream cheese, added 2 cans of cream style corn and a package of polish sausage, diced. It was delicious. I served it with a revised version of this site's "Savory Sausage, Cheese and Oat Muffins" since I thought a corn muffin would be redundant. ;)

Savory Sausage, Cheese and Oat Muffins

These muffins turned out beautifully. They were so tasty. What I had on hand dictated my substitutions: regular butter for reduced calorie margarine, 2 real eggs for 1/2 C egg substitute, packaged real bacon bits for meatless breakfast patties, and cheddar for Parmesan. I was a little freer with the cheddar than the amount in the recipe too. These were a tasty companion to this site's "Creamy Corn Soup". Thanks.

Moussaka

Using suggestions to reduce fat and separate egg whites and yolks, this was a big hit at our church "International Dinner". Thank you. Wonderful flavors. I used a French herb combination that included lavender for the "fine herbs" . Very nice.

Carrot Fruit Ring

I soaked the fruit mixture in bourbon overnight for a little extra kick. Yummy. Has a lighter texture than traditional fruitcake but still dense enough to satisfy my husband's fruitcake craving.

Apple-a-Day Pork Chops

Wow! What a great recipe. I had to substitute the currants and raisins with chopped prunes and craisins, and I used port instead of Marsala, tarragon instead of rosemary. Wonderful. Flavorful. A keeper. Served w/ stuffing and a simple salad.

Pumpkin Dump Cake

Great and easy dessert. I used a pineapple cake mix instead of spice, and I decreased the spices listed and added a little cardamon, which brightened it up a little. Yummy. Was asked for the recipe by guests.

Paella I

This is a wonderful recipe. Granted, I made substitutions, but still wonderful and very reasonable to accomplish without a lot of excessive time and effort. I used pepperoni instead of chorize, since in my area you cannot find the right kind of chorize. And, in place of mussels, I used canned clams. I also substituted part of the chicken broth with clam juice and used turmeric in place of the saffron. I've tried lots of paella recipes, and this one works for my family and me. Thank you.

Banana Oatmeal Crumb Cake

Wowie, zowie! What a yummy cake. I served it for breakfast as a coffee cake. Substituting shortening for butter (because it's what I had on hand) it still turned out incredible! Thank you.

Asparagus Quiche

This was one of those nights where I had to use what I had on hand. Replacing bacon with chopped ham, fresh asparagus with canned, cream with evaporated milk, and and swiss with cheddar, this still turned out delicious and I'll use it again. Thanks for the recipe.

Smucker's Chicken Salad with Wild Rice, Pecans, Grapes and Orange Dressing

Using what I had on hand, I substituted Unble Ben's long grain and wild rice mix, apricot pinapple jam and a raspberry walnut vinaigrette. I also added a touch of caraway. The result was very, very tasty! A keeper. Thanks.
