Smothered Filet Mignon

Great recipe! We used our George Foreman grill with it in the open position. Next time we will try with either Mozzarella, goat or Feta cheese.

Spinach and Rice (Spanakorizo)

I made this according to the most helpful suggestion of ReneeFS. I added a pinch of cinnamon and cumin which gave the dish that warm Greek flavor. (This might have been a little too tomato-ey, though.)

Great recipe!!! Family ate it up. Make sure all the rice and soup mix is wet by sprinkling a little more water on top with your fingertips before cooking.

Irish Cream Chocolate Cheesecake

Excellent cheesecake! My first! The only suggestion I will make is the recipe calls for the cookie crumbs to be placed on the bottom. The bottom was a bit thick, SO next time I will press the cookie crust on the bottom AND the sides.

Cocoa Rum Balls

This recipe is good; I just didn't do a very good job of crushing the wafers so I had a few chucks but the rum softened them overnight. Remember that the recipe calls for LIGHT rum. Next time I will also grind the nuts into smaller pieces.
