Strawberry Jam

This was so easy. I followed some advice from other reviews and used only 2 cups sugar and cooked the mix for 20 minutes. It looked done but I did the plate test anyway. Really tasty jam.

Sourdough Buckwheat Pancakes

These are really good pancakes. After discovering that I must have put the buckwheat flour back on the supermarket shelf, I used whole wheat instead. The ginger and vanilla are very subtle but important ingredients. Blueberries also add to the pleasure.

Lori's Famous Crab Cakes

The best crab cakes I've ever made. I followed the recipe to the end but thought the mix would not hold together so I added the leftover yolk plus about 3 tbl heavy cream. That worked well. I also didn't use all that oil. Yum!

Flourless Chocolate Cake I

This cake was a bit of a dissapointment because the texture was fudgy - not what I expected. Definitly serve room temp and with a strawberry or raspberry sauce. I probably won't do this again.

Easy Paella

I loved this Paella. Added 16 oz can diced tomatoes and left out the lemon zest. Removed the casing and cut sausage into 2" pieces,cooking sausage ahead, drained the fat. Added some back in the skillet for sauteing the chicken. Added the shrinp to the rice mix just before the finish. I will do this again soon.

Six Week Bran Muffins

When makeing this adjusted for 36 muffins, I exchanged oil (canola) for the shortening and used only 1 cup sugar. It was sweet enough for me and the oil is a better choice. No trans fats.
