Pumpkin Pancakes

WOW :) These were wonderful! Light and fluffy. Topped them with a maple/cream cheese glaze that I made with some leftover cinnamon roll frosting. Hubby and my picky boys all enjoyed and asked for them again! Will deff make again. Hopefully with fresh roasted pumpkin instead of canned. Can't wait till next time. Photo added :) BTW, my 11y/o says not 5 but 10 stars!

Slow Cooker Cranberry Turkey Breast

Taste wasn't bad, but I missed the crispy skin. I even put it in a 400* oven while I made the sauce. The sauce was way too sweet and I didn't even use the oj and did add the turkey gravy pkt.

Grandmother's Apple Bread Pudding

So nice to see "Splenda" recipes every once in a while :) This was delicious. I used FF 1/2 n 1/2 and blended the eggs right along with the cream and melted marg. In the sauce I cut the milk to 1/4c and used a 1/4c dark rum! Will certainly make again!

Homemade Black Bean Veggie Burgers

Very tasty! Didn't have enough chili powder and no hot sauce, so I used ground red pepper. Made a double batch with half bread crumbs and half oatmeal, as suggested. Formed the pattys and froze about 15 min before baking. Froze the left over cooked pattys and reheated for taco salad. Delicious.

Very Berry Blueberry Muffins

The BEST blueberry muffin I have ever tasted! I gave it 4 stars because I did alter a couple things. I used melted Smart Balance Omega 3 marg., added an extra 1/2 tsp vanilla, used a whole 1# bag of blueberries, and added a handful of pecans. This is my new go to muffin recipe! Can't wait to try with cranberries and walnuts and cherries and almonds!

Risotto with Asparagus

This was delicious and far easier than I imagined "risotto" would be for a first attempt. I added some fresh mushrooms with the onions and minced garlic right before the wine. I didn't pay attention to the quantity when following the recipe so my husband and I had plenty for leftovers the next couple days and it was just as good as the first day! Next time I have to cut the recipe down to serve 2.

Creamiest Rice Pudding

Oooohh! So rich and creamy! I had a craving for rice pudding and I can't have sugar (the sugar free ones at the store just don't cut it) so I used this recipe and fat free Half and Half (Land 'o Lakes) instead of the milk and an artificial sweetener (Splenda type). I couldn't even tell a difference. Since it is just me eating it I cut it down to 4 servings and it only took a half hour on the stove. I will definately make this again, and again and again.... I think I will take it to our next family gathering to see if anyone realizes it is "no sugar added"!

Cranberry Scones

I loved this recipe! If you add too much flour more that what is in the recipe your scones will turn out heavy and dry. If you think the dough is too soft just make sure your board is well floured, you will pick up more as you knead. I didn't add any extr flour other than what was on my board when I kneaded. Fabulous serverd with "Orange Honey Butter" from this site. I also served with my homemade Cranberry Walnut Jam. I will make again!

Stuffed Fish in Puff Pastry

Awesome!!!!!=) I didn't have puff pastry so I used Fillo sheets. It was for me and my husband so I didn't bother with the shaping of the dough. This was great paired with the Lemon Pepper Green Beans.

These green beans were great! I used fresh lemon juice and pepper, I also added fresh garlic. They were fabulous paired with the Stuffed Fish in Puff Pastry.
