Cranberry Sauce

Slow Cooker Latin Chicken

I found a new weekly standby recipe! Thigh meat is perfect for this recipe--I used bone in chicken thighs, and the meat literally fell off the bone. Excellent!

Country Breakfast Casserole

This is my secret weapon for picky eaters--I have never had a complaint from this casserole. I've made it a number of times, and unlike other recipes for breakfast casseroles, I didn't have to adjust a thing about it!! Thanks so much for what I consider to be one of the best recipes on this site!!

I cut down the lemon juice and added sesame oil and cumin as suggested by others, and it turned out fabulous. I think I'll keep making this recipe but tweak it around a bit more.

Vegetarian Chickpea Sandwich Filling

This is great! I used Smart Beat, a nonfat mayo alternative and added garam masala and chili powder as suggested by another reviewer (I left out the dill obviously). I also served it on a salad of baby spinach, alfalfa sprouts, tomato and avocado. Next time I might try lemon pepper to see if that lends another alternative flavor. Great recipe, thanks!!

Indian Chicken Curry II

A great base recipe. I added two small diced, cubed potatoes and green peas. I also increased the coconut milk to a full can of the lite variety, added garam masala, and used lemon juice as well as a bit of lime for more flavor. Make this recipe your own!!

Cuban Beans and Rice

Great dish! I added a load of cumin and black pepper to spice it up a bit, and I also added the kidney beans in the last ten minutes of cooking, as suggested by another reviewer. I added corn to the mix for a bit more color and nutrition, and just as promised, it came out great, even reheated and eaten with tortillas! I made breakfast burritos out of it the next morning with a little green enchilada sauce and cheese. Yummy!! I will make this a million times, I'm sure!

Escarole and Beans

Thanks for this recipe!! I had been dying to find a recipe similar to a dish I vaguely remembered that my father used to make. Using this recipe, I altered it to fit the way my father used to make it, which was to simmer the cannellini beans in chicken broth and mix the entire mixture in a baking dish with day old bread. Thanks for the recipe, and for the nostalgia!!

Cheesy Green Bean Dish

I really enjoyed this dish, however a bit more moisture is recommended for the bread crumb topping. I'm not sure if it was the elevation, but I had to used two eggs beaten in order for the bread crumbs to be moist enough not to fade into sawdust in the oven. I also substituted a cheddar and monterey jack mixture for the mozzarella as I like a little bite. I also sprinkled paprika and fresh ground black pepper on top of the cheese mixture, and grated fresh romano before applying the bread crumbs for a bit more spice.

A great vegetarian recipe. I added a bit of cinnamon to the red sauce to make the dish a bit more fragrant as well as sweet (it can be heavy on the stomach!), and it turned out perfect with the addition.

Award Winning Peaches and Cream Pie

This was absolutely awesome. I took the advice of another reviewer and used half of the cream cheese and substituted the other half for sour cream. I also used raspberry flavored peaches. The cinnamon didn't brown like others have said, and so it turned out perfect. Thanks so much for this awesome recipe. I can't wait to serve it at my next function!

Corn Noodle Casserole

This is a good, base comfort food. I followed the other reviewer's suggestions and used two cans of soup (I used one can of celery and one of mushroom) and also used grated mozzarella. I added green onions to the turkey and grated carrot to the casserole mixture. This is going to be a good one to use when I'm pressed for time!!
