Stuffed Green Peppers I
Really enjoyed this recipe but changed a few of the ingredients and it added a little 'umph' that some reviews said it was needing. I used a tube of Jimmy Dean sausage instead of the ground beef. It gave it a little extra flavor. Once the sausage was browned I set it aside to drain and cooked the onions alone. After the onions were translucent I added the sausage back and continued to follow the directions. I used 14 oz. of fresh chopped tomatoes as well (instead of the canned). When the rice/sausage mixture was ready I put it in a mixing bowl and added 1/3 cup of canned rice, one half cup of shredded cheddar cheese, 5 dashes of Tobasco sauce and about 1/4 cup of freshly chopped cilantro. I nixed the can of condensed tomato soup at the end I didn't think the mixture needed it. I baked it at 350 for 25 minutes and it was amazing! My husband and I will definitely eat it that way again! (note: boiling the peppers first is a MUST!)

Scallops with White Wine Sauce II
I doubled the sauce recipe like others had recommended and then added a half a can of clams plus fresh raw shrimp and cook that in there. I seared the scallops in a hot pan separately and topped my angel hair pasta and sauce with the scallops!! It was to die for, definitely going to make it again!
