The Best Meatballs You'll Ever Have

Incredible! Second time I've made these and got rave reviews again! A few minor modifications-used seasoned bread crumbs instead of croutons, doubled the recipe and used 1 lb ground beef and 1 lb hot Italian sausage but omitted red pepper flakes since I used the hot sausage. Also added 1/4 cup(ish) of diced green pepper. Used a pampered chef cookie dough type scoop to make them (sooooooooooooooooooooooo easy and fast!) and baked 20 minutes at 350! Incredible!

Pesto Cheesy Chicken Rolls

Everyone loved this in my family - even the 9 year old. The only thing I did change was seasoning the chicken a bit (garlic powder, pepper, salt) as well as doing the egg wash and panko bread crumbs as others suggested. I served it with Orzo with Parmesan and Basil that I found on this site and a salad. Will definitely make again!

I only give this 4 stars as I think it was a bit cheesy - both kids who love pasta and cheese commented that but the husband loved it and I didn't have a problem with it either so its a toss up. A great side dish - served it with the "pesto Cheesy Chicken Rolls" that I found on this site and a green salad and it was a fabulous meal.

These are fabulous- very moist, easy to make and everyone loved them. I went the easy route and just bought Duncan Hines cream cheese frosting as I was in a rush but still fabulous!!!

Four Cheese Macaroni

As someone else commented - this recipe is very similar to a Patti Labelle recipe I saw her make on Oprah....I have made it many times before but followed the advice of others and just doubled all the cheeses (except the velveeta) and left the rest of it the same - it was PERFECT! My kids who really like the boxed dry power stuff were even finally fans!

Frosted Banana Bars

These were out of this world. First time making banana bars as I have always just made bread and I don't know if I can go back now! Totally moist - to die for. I forgot to mash the bananas ahead of time but mine were really really overly ripe so I just threw in 3 medium sized and mixed for a bit longer. Will definitely be making this again!

Guacamole

We have just recently become fans of Guacamole (as long as its fresh!) and I have never attempted to make it - this was so easy and so good! I followed it exactly as the recipe stated and only added in about 1/2 t. of Cumin as others had suggested. I mashed the first 2 avocados and cut up the third in small chunks as we don't like it completely creamy. My 12 year old loved it and ate the leftovers (there was not much!) the next day. I also did as others suggested and kept the pit in the container with the leftovers really did help - it had hardly changed color at all.

Fire Roasted Tomato and Feta Pasta with Shrimp

I have made something similar for a few years but the change to using Roasted Tomatoes and adding in the Feta makes a HUGE difference. I also add a generous amount of red pepper flakes while I'm sauteing the shrimp. A great easy quick dinner!

Sausage Brunch Casserole

this has become a staple every Christmas morning for me to make at the in-laws. I do pre-bake the crust for 5 minutes as others have suggested and I also add in some scallions for color. Otherwise - I follow it exactly! So easy and even the pickiest kids love it.

Bermuda Spinach Salad

Love love love this salad - cut back the oil and mixed the sugar with part sugar part splenda. Omitted the croutons the second time I made a batch - didn't feel like they added much. I left pretty much everthing seperate until the morning when I assembled it for my lunch and left teh dressing seperate until I actually was ready to eat it to avoid the soggy factor. It was fabulous and I'm making it again for this week.

Bacon Water Chestnut Rolls

A huge hit at a party I went to recently. I followed the recipe exactly and the only thing I may change is adding a bit of hot sauce to give it a kick - but regardless are excellent. Making them again today to take to a party tonight. My girls love to help and what better way then having them to the "hard" work of wrapping the water chestnuts!

Awesome Slow Cooker Pot Roast

This is the "go to" recipe we always use when making pot roast. You can't go wrong with it as there is almost no way to screw this one up. The sauce is a perfect gravy for the mashed potatoes we serve with it (and corn!).

Sloppy Joes II

I made these and they turned out great. So easy and i just threw it all in the crock pot after cooking the meet to keep it warm until everyone was ready to eat. My kids had never really had them before and really enjoyed them. Didn't change a thing!

Mouth-Watering Stuffed Mushrooms

I had made these a few years ago for a New Years party and got rave reviews so I made them again for a SuperBowl gathering. These were great and so easy to make. I did have to warm them back up for about 35-40 seconds via the microwave at one point and that worked out fine. Depending on your mushroom cap size - these fill a lot more then 15 (which was FINE with my guests). I had a full 9x13 baking dish. I added garlic along with the chopped up mushroom stems as well as additional cayanne b/c I like the extra heat. I took another reviewers advise and dipped the caps in butter prior to filling and also used a ziplock bag to pipe the filling in. It went so quickly and they were fabulous!

Turkey Tetrazzini II

This was fabulous - my husband raved about it for at least a week and fought for the leftovers. I did modify a bit as others did. Added garlic and mushrooms - would have added onions but we were out. I only used parmasean as the recipe called for and really liked it! It does make a lot but it was well worth the time and effort - a definate keeper from here on out when we have turkey or chicken leftovers!

Apple Crisp II

LOVE LOVE LOVE this recipe. I've made it 3 times in the past 6 weeks with a few alterations each time. First time, did it other suggested doubling the topping (but not the oats) - it was perfect although i found the cinnamon flavor a bit strong. The second time, I was out of oats but still doubled the other topping mixture while decreasing the cinnamon a bit and it was fabulous. I like ours cold so the water issue is probably not as big for us as it is pretty firm when chilled. As I type this my daughter is cutting up apples to do it all over again. This is definately a keeper!

Carol's Chicken Salad

This is fabulous - my husband gave it rave reviews and he ALWAYS compares to his aunt's famous chicken salad. I omitted the grapes b/c he tends to like it as a sandwich and that didn't appeal to him however follwed everything else exactly as the recipe. I also have done this using grilled chicken or rotisserie - both come out GREAT!

Won Ton Wrapper Appetizers

I took these to a neighborhood Bunco party and they were a HUGE hit. I omitted the black olives as I'm not an olive fan, added a little bit of garlic salt, crushed red pepper and chopped green scallions. I've also made it using Hot Italian sausage to give it some kick. As a time saver, I generally use the pre-made phyllo shell cups instead of the won tons as you can just throw them on the pan and fill them up and bake for 10-15 and they are ready to go. I've had issues with the won ton wrappers getting rubbery on the bottom and too crisp on the sides.
