Pecan Crusted Chicken Salad

This is delicious. Replace the creamy salad dressing with a balsamic or low fat raspberry vinaigrette and sprinkle 1/2 cup of pecans over the salad instead of breading the chicken with them and you will have have a truly light salad. At 956 calories and 70g of fat, this does not qualify as light and should not be advertised as such.

Snowballs

I've used this recipe for about 3 years and have never had problems with the dough flattening out. Perhaps people are melting the butter instead of softening it at room temperature?? Also, you can definitely taste the salt in this cookie. I like that contrast between salty and sweet. But it can be overwhelming. Be sure to use real, unsalted butter and reduce the salt from 3/4 tsp to 1/2 tsp.

Cheddar Cheese Straws

I only feel compelled to rate recipes that are really good...or really bad. Unfortunately,this one was really bad. I followed the recipe to a T. There was hardly any cheese flavor at all. Maybe I should have done as others suggested and used freshly shredded cheddar.

Ten Minute Szechuan Chicken

This is one of my favorite quick and easy recipes. I always add with a bag of frozen stir fry veggies to the chicken instead of serving it over rice. If you do it that way you can even use less chicken. Two large chicken breasts are enough for a satisfying meal.

Roasted Potatoes with Tomatoes, Basil, and Garlic

A little bland. Needed plenty of salt and pepper. Also, next time I'll follow some of the suggestions to add the basil 10 minutes before the potatoes are done. But with a few tweaks, this will be the way I roast potatoes from now on.

Barbara's Golden Pound Cake

I'm eating a warm piece from the oven and it is GREAT!! I didn't have lemon extract, so I added a teaspoon of lemon zest and a teaspoon of fresh lemon juice to the batter. I also used about 3 Tablespoons of lemon juice and only 1 cup of confectioners sugar for the glaze. It turned out great and was more than enough for the cake. This is definitely going in my recipe box!

Beef Teriyaki

This was delicious. I used 3 cloves of fresh garlic in addition to the garlic powder and added red pepper flakes and a touch more brown sugar. The kids loved it. Will definitely make it again.
