Baked Delicata Squash with Lime Butter

I loved this! It was easy and was such a nice change from the typical recipes for baking squash (which are invaribly sweet). It made a wonderful and interesting side dish for a Mexican dinner.

Spaghetti with Broccoli and Mushrooms

I just got done having this for dinner tonight. I followed the recipe, except I used fresh broccoli, mushrooms, garlic, and basil. It was very good, the only thing keeping it from being a Five Star was the salt. I don't typically use salt and I thought 1 tablespoon seemed like a lot so I cut it in half -- this still tasted extremely salty to us. On the plus side, the dish was so good that I will make it again with no salt. Excellent vegetarian dish!

Molten Chocolate Cakes

Okay, I had to give this 5 stars because I made so many mistakes with the recipe and it stilled turned out delicious! I am looking forward to making it again and actually following the recipe, I can't even imagine how good it will taste. So my mistakes -- I used unsweetened chocolate instead of semi-sweet (not bad if you don't like overly sweet desserts, I think I might try 2 oz. of each next time) and I completely left out the flour! The cakes came out as flat as can be but the taste was still yummy! I recommend following the recipe exactly.

Festive Corn

This was very good. I made a few changes -- omitted the green pepper cause I just don't care for it and doubled the red pepper. I also used some leftover corn on the cob instead of frozen. I thought it was okay, but my partner LOVED it and wanted to know when I would make it again. I never get asked that.

Delicious Salmon Pasta Salad

Good starter recipe - can use whatever veggies you have on hand (I went with edamame) and the dressing is quite good but just a little too much oil (3/4 cup would be just about right).

Mushroom Lentil Barley Stew

Had for dinner tonight - delish! I did substitute all fresh mushrooms (a variety) and based on another reviewer, I subbed italian seasoning in for summer savory. Quite good - I'm looking forward to the leftovers for lunch tomorrow!

Tortellini Soup

Good healthy lunch! I made several changes based on previous reviews (added onion & garlic, oregano, thyme, red pepper flakes, basil, italian seasoning) and I used frozen kale instead of spinach, as that's what I had on hand. Great basic recipe that is easy to tinker with. I'm guessing this is one of those that will taste different every time I make it, but always be good.

Sauteed Swiss Chard with Parmesan Cheese

Easy Turkey Curry

I enjoyed this very much and the leftovers were AWESOME but I had to rate it four stars because of the changes I made. I made it with (fake) burger crumbles and brown rice, and I upped the curry to 3 1/2 teaspoons. It was easy and quick to make with ingredients that I tend to keep on hand.

Busy Night Turkey Taco Soup with Avocado Cream

I tinker with this recipe everytime I make it based on what I have in the pantry, but it is a FANTASTIC basic recipe. Since I first made this the day after Thanksgiving last year, I have made it a half dozen times and it's always a hit.

Thai Curry Tofu

Stacey's Fabulous Purple Potato Gratin

This was delicious! Easily the best gratin potatos I have EVER made - this recipe will be my new stand-by for potatos. (I had to rate it 4 stars because I changed a few things - used cheddar as suggested by other reviewers, and because it was all I had on hand, and omitted the bacon since we don't eat pork). I look forward to trying it with goat cheese though - it sounds amazing. Thanks for an easy, yummy recipe.

Baked Whole Cauliflower

WOW! This was awesome - thank you for such a good recipe. Based on others suggestions I did cut up the cauliflower, melted the butter and dipped the cauliflower pieces into the butter, then into the topping. This worked very well and I had just the right amount of topping. This is going on my Thanksgiving menu -- thanks again.

Eggplant Croquettes

I LOVE THIS RECIPE!! We keep getting eggplant from our CSA and my partner hated it -- but now she loves this recipe. I have made it multiple times now and it's always a winner. The only change is that I just use one egg and that seems to get it just the right consistency.

Tofu and Veggies in Peanut Sauce

I love this! Quick, easy, and delicious. I did follow the tip of grilling my tofu first -- I think next time I will try to press it first. Also -- it will seem like the sauce is too thin but it did thicken up nicely after I poured it over the tofu & veggies and heated it. GREAT RECIPE!

Simple Hamburger Stroganoff
