Basil Chicken and Pasta

Simple Scones

This were so easy and so good. I made them for a brunch and they were truly the hit of the meal. I used the suggested variation of orange rind and chopped pecans. I can't wait to make them again!

Mexican Chicken Corn Chowder

I love this recipe! I make it without the chicken (trying to become a vegetarian household) and it is a staple for us. It is a great recipe as is and it's also fun to play around with some substitutions too. I sometimes use salsa in the place of the tomato and chili's and that is good too. I also use much less cheese than is called for, but that's a personal preference.

Tofu Parmigiana

This is simply excellent. I did follow the suggestion of freezing the tofu, which helps makes the texture ideal for this dish. This is a new favorite in my house and I am looking forward to making it for company. If I have any complaint, it's that it will give people an unreasonable idea of how good tofu can taste!

Spaghetti with Broccoli and Mushrooms

I just got done having this for dinner tonight. I followed the recipe, except I used fresh broccoli, mushrooms, garlic, and basil. It was very good, the only thing keeping it from being a Five Star was the salt. I don't typically use salt and I thought 1 tablespoon seemed like a lot so I cut it in half -- this still tasted extremely salty to us. On the plus side, the dish was so good that I will make it again with no salt. Excellent vegetarian dish!

Simple Hamburger Stroganoff

Festive Corn

This was very good. I made a few changes -- omitted the green pepper cause I just don't care for it and doubled the red pepper. I also used some leftover corn on the cob instead of frozen. I thought it was okay, but my partner LOVED it and wanted to know when I would make it again. I never get asked that.

Tofu and Veggies in Peanut Sauce

I love this! Quick, easy, and delicious. I did follow the tip of grilling my tofu first -- I think next time I will try to press it first. Also -- it will seem like the sauce is too thin but it did thicken up nicely after I poured it over the tofu & veggies and heated it. GREAT RECIPE!

Busy Night Turkey Taco Soup with Avocado Cream

I tinker with this recipe everytime I make it based on what I have in the pantry, but it is a FANTASTIC basic recipe. Since I first made this the day after Thanksgiving last year, I have made it a half dozen times and it's always a hit.

Easy Turkey Curry

I enjoyed this very much and the leftovers were AWESOME but I had to rate it four stars because of the changes I made. I made it with (fake) burger crumbles and brown rice, and I upped the curry to 3 1/2 teaspoons. It was easy and quick to make with ingredients that I tend to keep on hand.

Molten Chocolate Cakes

Okay, I had to give this 5 stars because I made so many mistakes with the recipe and it stilled turned out delicious! I am looking forward to making it again and actually following the recipe, I can't even imagine how good it will taste. So my mistakes -- I used unsweetened chocolate instead of semi-sweet (not bad if you don't like overly sweet desserts, I think I might try 2 oz. of each next time) and I completely left out the flour! The cakes came out as flat as can be but the taste was still yummy! I recommend following the recipe exactly.

Bean Soup With Kale

Thank you so much for this recipe! We just got our first shipment of veggies from our local CSA and I had never cooked with collard greens before. I was actually confused and thought they were kale so I used them in this recipe -- but the results were delicious! Great for dinner and the leftovers were yummy too!

Connie's Zucchini "Crab" Cakes

These were a huge hit in my house! My partner is not a fan of crab (which is a big sin in Maryland) and she doesn't much care for zucchini, but this sounded so good I had to try -- and we both loved them! They won't fool anyone into thinking they are made of crab, but they are delicious in their own right. I did increase the Old Bay to 1 tablespoon, but other than that, I followed this exactly.

Eggplant Croquettes

I LOVE THIS RECIPE!! We keep getting eggplant from our CSA and my partner hated it -- but now she loves this recipe. I have made it multiple times now and it's always a winner. The only change is that I just use one egg and that seems to get it just the right consistency.
