Kentucky Tomato Soup

This was my first time making tomato soup from scratch. I followed the recipe exactly. I liked it but it was missing something, not sure what. I am now going to try other tomato soup recipes and see how they rate to this one.

Stuffed Green Pepper

I had some fresh tomatoes from a friends garden to use up when I came across this recipe. It caught my eye because of the fresh tomatoes. I followed the recipe and made no changes. The only complaint I have is that the sauce is very thin. Next time I will cut the water in half to 1/2 cup. I love the idea of using fresh tomatoes and green peppers from the garden. I did enjoy the light fresh taste. When I'm given vine ripe tomatoes, I would make this again.

Mexican Inspired Summer Menu

Spinach and Artichoke Dip

I always keep these ingredients on hand to make this yummy dip when friends stop by. I only use one cup cheese because I like the texture better. I also bake longer about 30 minutes, it just didn't seem done after 15 minutes.

Lime-Cilantro Vinaigrette

I've been making salads all summer and I like to make my salad dressings homemade. This recipe caught my eye as I love cilantro and always have some in the fridge waiting to be used. The only change I made was I used Dijon mustard instead of spicy brown mustard. Next time will add some color to my salad, like cherry tomatoes. My salad ingredients were mixed greens, avocado, red onion and sliced chicken breast and feta. This salad dressing is a bright green and has a crisp fresh flavor.

Strawberry-Raspberry No-Cook Jam

Really good jam! Strawberries are so flavorful right now so the jam was delicious. I used granulated sugar, I don't care for splenda. I also like that the recipe doesn't make a ton.

Pork Chop Grill

I try and follow a recipe exactly the first time I make it as I did here. I will be making these pork chops again as they were very moist and tender but would like a little more flavor. Next time I think I will brush on a little BBQ sauce right before they come off the grill.

I've made this recipe a few times and have made a few changes. Really good as is but I made it easier for me. Instead of 5 tablespoons soy sauce I use 1/3 cup, just easier to measure. I like to use a garlic press so instead of 2 tablespoons garlic I used 1 tablespoon crushed garlic. I also used only 1 tablespoon seasame seeds instead of 2. I only marinate for two hours, it's all the time it needs as the meat is sliced so thin. The last change was how I grilled the beef. I used skewers and skewered the meat back and forth onto the skewers. It made it easy to manage the meet on the grill. But like I said, recipe is 5 star already. It's so tender and flavorful!

Loved this recipe. A friend of mine has this recipe but uses balsamic vinegar. I've made it both ways and I have to say if you like balsamic it gives this recipe one more star!
