Michelle's Coconut Chicken Curry

This is a 5-star plus recipe, as long as you are one to read all the reviews. And, I mean ALL! I essentially added almost every, single possible addition mentioned in the reviewer's notes and was SOOOOO super impressed! To simplify what I added: 1)carrots, potatoes, and frozen peas, 2) few scrapes fresh ginger, 3) 1/2 tablespoon cayenne pepper, 4) four cloves garlic crushed, 5) four tblspns yellow curry, 6) Fresh basil, 7) 1 tspn garam masala, 8) squeeze of lemon, and 9) 2 tsp brown sugar. Truly, it was sensational; served with rice and snap peas! Thanks, to the author and all reviewers!

Cuban Ropa Vieja

I bought a crock pot specifically for this recipe. I could not have been HAPPIER!!! I made this ropa vieja for my boyfriend's 30th birthday and I got nothing but rave reviews for days to come! The only changes I made was I added an entire head of garlic (chopped) and 1/2 a 7oz jar of diced red pimientos, in addition to all the other ingredients. I also took out some of the liquid approx 1 hour prior to finishing (on the 4 hours HIGH mode), shredded the meat then, and added 2 tblspns of Brown Sugar, then stirred. This really made the flavors come alive by the end of the 4 hours. Probably one of the best recipes I've ever made! Served over white rice, black beans, w/ salad. THank you so much!!

Pumpkin Turkey Chili

I give this recipe 5 stars for the absolute genius of adding pumpkin to my chili!!! Hubbie and I LOVED it.. he insists that I make it again soon! However, the end-result was not b/c I followed the recipe exactly. Quite the contrary... I DID read the reviews thoroughly and used quite a few of them to make this top-notch chili a success!: 1) Add can of black beans, 2) Add can of corn, 3) Add 1 1/2 cans of diced tomatoes, 4)Add packet of taco seasoning, 5) Add 3x chili powder, 6) Add nearly a whole can of chicken broth (good for consistency and flavor), 7) Add 2 TBS worcestershire and 8) Add dashes of cinnamon and nutmeg to REALLY bring out the complexity of the pumpkin in this chili. Absolutely delicious! Thanks so much!

Uncooked Banana Pudding

Made this last night for girl's night with ALL fat free or low fat ingredients. It was such a big hit! I had some today, 24hrs later, and found it to be even better, now that the cookies have softened up. This was great, different, and sooo easy!

Mom's Lasagna

TEN STARS!!!!!!! Absolutely fabulous and super easy lasagna! The sauce and the cheese are what make this recipe so special (I've never put parmasian cheese in the layers of the lasagna itself). I did make two major substitutions, however: 1= ricotta cheese (mixed in with 1 egg, + basil, + chopped parsley, + some grated parm cheese) instead of the cottage cheese, and 2= italian sausage instead of the beef (I used 2lbs, b/c I actually doubled the sauce). My husband just got a new job and this was a celebration meal-- and it seriously was better than any lasagna we've ever had at a restaurant!! Thank you!

Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

I also made some changes to this dish- I used 4 chicken breasts (chopped up), added 2 packets of GOYA Sazon (as mentioned previously), 3 TBSP of GOYA Sofrito (found in latin american food stores), and a can of diced tomatoes mentioned previously, as well. The canned potatoes were a million times easier (and just as tasty) and I also served this over white rice w/ black beans. Fiance loved it and had the left overs for the next 2 days!

Zesty Slow Cooker Chicken Barbecue

Easy, impressive, and TASTES AND SMELLS delicious while cooking! I can't wait to try different barbq sauces with it. I used Jack Daniels sauce and also shredded the chicken 6 hours into cooking on low and served it at 7 hours of cooking. After shredding the chicken (which fell apart upon touching it with the fork!), the dish really came together- it was no longer runny and the taste really melded. Shredding the chicken is absolutely a must for this dish. Thank you!

Special Lobster Bisque

WOW, WOW, WOW. Made this to accompany a lobster tail dinner for my family and EVERYONE raved! My father-in-law even stated that he's had lobster bisque all over the world and that this recipe was on-par with some of the best restaurants he's been to. And the best part?- it was SOOO easy to make! I did add about 2 tablespoons of dry cocktail sherry to it at the end. Thanks so much for the fantastic recipe!!

Anchovy Linguine

My fiance and I estimated that you would likely pay $16-20 for a plate like this in a restaurant in town!! And it was soooooo easy! Really delicious with some chopped tomatoes and brocoli in it and feta cheese on top. Thanks for the truly amazing recipe! Next time, I think I'll add shrimp or mussels to it and make a $25 recipe, or more!

Grandma's Slow Cooker Vegetarian Chili

I made this recipe exactly as written- including the baked beans. I must say, the first day I thought it was terrible and almost threw it out, but my fiance convinced me otherwise (he apparently liked it). I'm really glad he did, b/c for some reason, this dish was soooo much better the following day! We had it for dinner the following 2 nights as bean and cheese burritos w/ sour cream and salsa. They really tasted like gourmet bean burritos! Crazy, huh? But, it definitely got 4 stars for that!

Beefy Lasagna Roll-Ups

Made these tonight and they were amazing. Delicious as written- I just added some salt to the sauce and some mozzarella sprinkled on top of the roll-ups (in addition to the Cheddar cheese). Both my husband and 2 year old daughter devoured theirs. :-)

Salad Nicoise

Followed directions to the "T" and also used the "Lemon Vinaigrette salad" dressing from this website. Absolutely delicious! A perfect summer salad. Extra bonus: my husband told me this is THE BEST salad he's ever had in his life! He wants to have it again this week!

Muenster Chicken and Mushrooms

Really fantastic!- especially when you dip the salted and peppered chicken into egg --> then flour --> then egg again--> then breadcrumbs. Poured sauteed onions and mushrooms over the chicken, then added the muenster cheese. GREAT, moist, and super tasty chicken dish! My husband and I loved it. Thanks!

Gingery Fish Kabobs

I would give this more stars if I could! WOW! We are from Miami and liken this to our favorite dish at our very favorite seafood restaurant- Captain's Tavern. We made this with grilled (frozen) yellowtail (from a catch 2 weeks ago) and served with reduced marinade on top of the fish. We accompanied it with black beans and rice (just like our favorite restaurant) and- voila!- we had one of the most GOURMET meals we've ever made at home! Definitely impressive enough to serve to any VIP guest! No joke. My husband was blown away- as was I. A+++!

Orange Pecan French Toast

I made this for Easter brunch this Sunday and it stole the show!!!! Everyone- from my sister, to my husband, to my parents, to my in-laws- said it was one of the best french toasts they'd ever had. The brown sugar pecan topping is perfect! I followed one reviewer's recommendation to use frozen loaves of french bread- Pepperidge Farm or your local grocery store brand- so that the pieces didn't get too soggy. Worked out PERFECTLY. Soooo impressive. I would give it "10 stars" if I could! Love, love, love.

Salmon Patties I

After heeding multiple reviewer's suggestions, this was an all star dish! I added 2 eggs instead of 1, added green onions, crushed garlic, black pepper, some old bay seasoning, a squeeze of lemon, and a few dashes of Tabasco. They were delicious!! I also followed a previous recommendation to serve with dipping sauce of sour cream, dill, and lemon. Absolutely fantastic dinner! My husband is still raving, hours later. :-)

Candied Yams

This recipe got me compliments from all 8 people at the dinner table tonight! We were having a post-thanksgiving weekend dinner (with turkey, green bean casserole, etc.)and this was the first time I'd ever made candied yams. They turned out fantastic! I also added cinnamon after the butter/sugar combo was in place. And, I added the marshmallows at the last 5 minutes in the oven. This was fantastic! Everyone got seconds. :-)

Lisa's Best Baked Clams

Very easy and quite the impressive treat coming out of the oven! Served as appetizers for my husband's birthday dinner- he LOVED them and was quite impressed. Think it may have been better with fresh parsley and only 2 tablespoons of garlic-- will try with these changes next time.

Busy Day Barbeque Brisket

I am from Texas and have long dreamt of finding good bar-b-q in Miami, Fl (which is difficult to come by!)... well, I have to look no more for mighty good brisket!! I can make it at home now! This was phenomenal! I doctored it up (made it a tad bit sweeter w/ some brown sugar at the end), but made it exactly as written otherwise. My husband was in shock at how good this was! We served on buns w/ chopped onions and pickles and some corn-on-the-cob on the side. Absolutely wonderful meal to come home to! Thanks so much!

Peach Cobbler Dump Cake I

My husband was making funny "yummmm" and "Ummmhmmm" noises as he ate it- and he couldn't believe it tasted soooo good, but was so easy to make (he saw me make it from start to finish in approx 5 minutes). I did add (as previous reviewers mentioned) some nutmeg to the peaches and some cinnamon + brown sugar on top. I would give this a 4.5**, but to be a 5 it needs a little bit MORE filling. Adding another can of drained peaches would likely do the trick. Thanks!
