White Wine Chicken Soup

Delicious. I added a small ginger root, 7 bay leaves, 4oz canned mushrooms and 8oz box of frozen spinach. Ate this soup as a cold remedy and I feel much better!

After the Holidays Ham Bone Soup

Delicious. The cooking time was weird though. My pasta and veggies came out mushy, plus the potatoes were completely gone (melted away). I suggest this cook time instead. Boil, then simmer ham bone med- low - 1 hr Add potatoes - 30 min Add all other ingredients except tomato sauce - 30 min For flavor, I added garlic & onion powder & boullion cubes

Creamy Vegan Corn Chowder

It was a little too spicy, so I'd halve the salt & pepper. Add more carrots or celery for substance, plus one box frozen kale and cubed tofu. I used skim milk and added a scoop of soy protein and ground flaxseed for a nutritional boost.

Mimi's Zucchini Pie

Pretty good. Recipe calls for way too much oil. 1 tbsp is enough. My family doesn't eat cheese, so I sprinkled Italian bread crumbs on top for a crust. For flavor, I put fresh garlic and Italian seasoning into the mix. Next time, I'll try adding a ham bouillon cube or chopped ham. The tomatoes make this dish so don't skimp!

Sauteed Apples

Mine came out like applesauce. For more crunch, I'd skip step one with the butter entirely (it's not needed) and just saute the apples with the spices.

Baked Miniature Pumpkins

Interesting and fun. I couldn't find the pumpkins shown in the picture. When I saw mini's and asked if they were "sugar" pumpkins, everyone said no, they're only for decoration and not good for eating. So I used a lg sugar pumpkin and used this recipe as a filling. 1/4 teaspoon salt 1 medium tart apple, thinly sliced 1 tablespoon raisins 2 tablespoons butter or margarine 2 tablespoons brown sugar 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg

Pumpkin Pie Squares

Delicious! There's definately not enough crust to cover a pan. I followed the directions exactly and my crust was burned after 15 min. By the end of cooking, it was inedible. But the pie filling was excellent. My recommendation is to double the entire recipe. Bake the crust for only 5 min and add 10-15 min cook time to the pie filling. Once out, let it stand for at least 1/2 hr. Pumpkin sets better over time.

Easy Apple Crisp with Honey

This was pretty good. I really liked the crunch of oats, so I'd add more next time. It also needed more cinnamon, so I upped to a tablespoon. For a recipe with no sugar added, this was a little too sweet for me, so I'd cut down on the honey.
