Grilled Cilantro Salmon

My all-time favorite salmon recipe! You will be amazed at how well this pulls together. This is the recipe that gets your kids to like fish. My roommate, who hates fish, tried it and loved it. The honey carmelizes on the salmon, making a satiny glaze. The cilantro in this pairs very well with the lime and surprisingly well with the honey, which offers a very nice sweetness. This recipe is very fast, it takes about 10 minutes to put together, and is ready in another 10. Restaurant quality. We broiled ours for about 6 minutes per side which is what gave it the wonderful glaze.

Apple Chutney

I have to give this recipe a 5 because it won me our mock-Iron Chef competition! We put it over pheasant, we used red wine vinegar instead and it turned out great. Just the right amount of tang and sweetness.

Grilled-Salmon Lemon Basil Cream

This salmon was very very good - the sauce was creamy and easy to make, very good with the fresh basil. Try it over whole wheat pasta.

Caprese Salad

Instead of fresh mozzerella I used regular but the results were wonderful. I used about half the amount of oil and vinegar. It was wonderful with fresh tomatoes.

Grandma Johnson's Scones

These scones were so good, they were incredibly tender and sweet. A little different than what I was expecting, I was thinking something a little less sweet - they were almost like cookies. But I loved them still, and were excellent with clotted cream and jam

Caramels

These caramels were so soft and chewy, with a make your mouth water flavor. They weren't as smooth as I would have liked, but still really good. I wrapped them up in wax paper and gave them as a gift.

Whole Grain Waffles

I love these waffles! The texture is so tender, the flavor is so rich, I wish I could eat more of them, but they fill you up fast! Try with real maple syrup - it makes them even better!

Chicken Papadoris

So good! I made it for my roomates for Sunday dinner and everyone loved the blend of flavors - the curry and pine nuts complement each other. And can I say, coconut milk! Amazing flavor. After the sauce was combined I tossed the chicken back in the pan and let it boil down with it, till it was thick enough, and didn't add the cornstarch. Wonderful! Next time I want to make an almond bread to go with it.

Broiled Tilapia Parmesan

This talapia is pretty darn good. The flavors all complement each other very well. I do wish I had put in some bread crumbs for a little more texture, and to tone down the parmesan which was a little overpowering for me. I love the flavors though - especially with the flaky texture of the talapia. I didn't use any mayo, so that may have caused the extra-intenseness of the topping. Wonderful.

Spaghetti Squash with Pine Nuts, Sage, and Romano

I loved this! The balance of flavors was perfect. Everything complimented each other so well - I loved the pine nuts with the squash, and the cheese (I used freshly grated Parmesan, what I had on hand) was a nice finish. The sage wasn't too overpowering either. I used rubbed sage and it was still fantastic. We paired it with some breaded chicken cutlets and some good bread - fantastic meal.

Chicken and Sausage with Bowties

I used this basic recipe to accomodate some ingredients I needed used - so mine turned out a bit different than the original, but as the chef herself noted, neccessity is the mother of invention! I didnt' use any chicken and added a can of tomato sauce instead of wine, and added about a cup of chopped zucchini. I didn't have any rosemary so used basil, thyme and sage instead. I added the zucchini pretty early in so it could cook with the sausage which gave it amazing flavor and even my little brother who doesn't care for it said it was tasty. I give it 4 stars just to compensate for the differences there may be between the original

Fettuccini Carbonara

This wasn't all I had hoped and dreamed. The sauce gelled up with the eggs, and wasn't as flavorful as I would have liked. It could be good though with a little modifications. I think I will try it again sometime, just a little different.
