Easy Fruit Cobbler
Incredibly easy to make and customize. I added a bit of vanilla to the dough and sprinkled a bit of brown sugar on the top to make a bit of a crust. It's dense and rich and delicious! Change up the fruit and you've got something for any season. I used a mix of frozen berries and fresh peaches, and it was great.

Zesty Slow Cooker Chicken Barbecue
Absolutely fantastic. I had a party of 50+ people, used two crock pots divided evenly with this recipe -- one with a basic sweet bbq sauce and italian dressing, the other with a smoky chipotle bbq sauce and balsamic italian dressing (made with four seasons packets). BOTH were fantastic - some of my guests were even convinced that the second recipe with the balsamic dressing was pork, not chicken. I served this with hamburger buns, and everyone was thrilled. Be aware that once the chicken is fully cooked, it looks a bit dry and the sauce is watery. Don't be worried - as soon as you shred the chicken and return it to the pot, the chicken soaks up the sauce and it becomes just the right thickness. In future, I plan to keep using the smoky sauce and balsamic dressing, but in general, you just can't go wrong with this recipe.

Thighs on Rice
This is a simple starter recipe that you can customize easily! I used brown rice, olive oil instead of the white rice and butter, added a cup and a half of sliced mushrooms, and added a tsp of curry powder, smoked paprika and onion powder. The brown rice takes longer... give it about 1.5 hours. At an hour, we turned the chicken to make sure it didn't dry out, and that really ensured a juicy chicken. Fall apart tender! I'll be making this again for sure.
